Frosted Freckled Lemonade Over Mother’s Day weekend Jim and I were in Utah. We were able to attend the wedding of one of our niece’s and also celebrate Mother’s Day with Jim’s mom and all his siblings. That hasn’t happened for a very long time. There was lots of talking and visiting and one of the conversations with my sister in laws turned to food. That does happen a lot! We were discussing the Chick fil A Copycat Frosted Lemonade recipe I had posted a few weeks ago and my sister in law Jayna shared that one of her favorite frosty drinks is a frosted freckled lemonade. I guess Red Robin makes a Freckled Lemonade, basically strawberry lemonade. Well, Jayna loves to make a frosted version of this freckled lemonade and I thought it sounded delicious too!Lucky for you and me, Jayna shared how she makes it with me. You will need ice cream (Jayna buys a quart of soft serve from Dairy Queen), pink lemonade and frozen strawberries. Only 3 ingredients! We love those 3 ingredient desserts!! Pop all three ingredients into your high speed blender or your mixer with the paddle attachment. Mix it until it is all combined. Then put it into your glasses and add a spoon. You will need a spoon not a straw!Can you see why it’s called Freckled Lemonade?? Love those little strawberry freckles. Creamsicle Ice Cream Pie – only 3 ingredients! Do you have big plans for this holiday weekend? Maybe a BBQ or other fun event with family and friends? Well, if it’s a potluck and you have your choice of what to bring, pick dessert. Then make this yummy Creamsicle Ice Cream Pie that only needs 3 ingredients. It’s easy and it’s delicious so it is sure to be a hit. We are big fans of ice cream pie at our house and it always makes regular appearances during the holidays especially. Today’s Creamsicle Pie is a little variation on the Pink Lemonade Pie I have shared before. The only difference is I added orange juice instead of pink lemonade! I am a big fan of creamsicles, those yummy orange and vanilla ice cream treats I ate as a kid all summer long. Creamsicle Ice Cream Pie has the same flavor but it is just in pie form, a little more grown up. All you need is some vanilla ice cream, a can of frozen orange juice and a graham cracker pie crust. You can buy a store bought crust or make your own but then you can’t call it 3 ingredient creamsicle ice cream pie if you make your own crust! Mix together the slightly softened ice cream and orange juice. I just do it with the paddle attachment in my Kitchen-Aid and then pour it into your graham cracker crust. If you want, you can garnish with some whipped cream and a few orange slices. A pretty and delicious pie! Then all you need is a fork. Creamsicle Ice Cream Pie - only 3 ingredients! Malted Milk Ball Ice Cream 2015We have been enjoying some summer like days here in Oregon and it has totally got me in the mood for homemade ice cream. I just couldn’t help myself and this weekend I broke out the ice cream maker and made a batch of one of my favorite, favorite ice creams. I first shared this recipe in 2008 so it was overdo for a recipe redo and some new photos and I am always looking for an excuse to make malted milk ball ice cream. I am a big malt fan and love it in my rice krispie treats, my cookies and even my hot chocolate! Here is the original post from July, 2008 when I still had kids at home! We are an ice cream loving family. Growing up there was always a freezer FULL of ice cream, in fact at one time we had a freezer in the garage totally dedicated to ice cream. That was the year my sister worked at Baskin Robbins and they let them bring home all their mistakes – fortunately she made a lot of mistakes! Monday night I dug out the countertop Cuisinart ice cream maker to celebrate the arrival of summer and to make treats for family night (a regular Monday night occurrence at our house). We had a short lesson and an activity which was weeding the vegetable garden for 30 minutes. Believe me the kids were thrilled! The best part of family night though is the treats! I was in charge this week. I have been on a malted milk ball kick recently. My favorite treat has been a bowl of Haagen Daz vanilla ice cream with crushed up Whoppers on top – yum! So I decided to combine the two and make this ice cream. I used my basic vanilla ice cream recipe and my 2 qt. Cuisinart Ice Cream Maker and went from there. Adding in Whoppers and malted milk powder. Put it on top of a waffle cone and yum! I like my ice cream a little harder so I put the container full of ice cream into the freezer for a while for it to firm up after the machine shuts off. So if you don’t have an ice cream maker but want to give my Malted Milk Ball Ice Cream a try just buy yourself a pint of Haagen Daz vanilla and crush up a few Whoppers and you are good to go! It won’t be quite as “malty” but it’s a close second. But you really should get yourself an ice cream maker. This is my favorite one and the one I use. Happy Almost Summer! - 1½ C whole milk

Nutella Cheesecake

Prepare the crust. Preheat oven to 350 F (180C). Remove the cream between oreo cookies and crush them using a food processor. Melt butter and pour over the crushed cookies. Process until evenly moistened. Press cookie mixture with the back of the spoon into the bottom of a 10-inch (26 cm) springform pan (with a removable base). Bake for 13-15 minutes. Set aside to cool completely.
In a large bowl beat the cream cheese with 3/4 cup heavy cream until well combined and the mixture seems fluffy as the heavy cream has whipped a bit. (This is very important, because this is what makes possible creating the 2 layers effect.) Gradually add the sugar mixture and mix until creamy and smooth. Add vanilla extract and mix again until well combined. Add eggs one at a time until each egg is incorporated.
Remove and run a sharp knife completely around the inside edge of the pan. Let it cool completely at room temperature.
