Chili Con Queso Dip Chili Con Queso Dip only has four ingredients and comes together in minutes! I learned a lot of things over the past weeks with the passing of my father.  One of them is the power of food to heal.  The time we spent at my father’s side the last few days of his life and the days following his death planning the memorial service time seemed to move so slowly, almost standing still.  I also discovered that I didn’t have much of an appetite or at least thought I didn’t.  But when I finally did eat something it was amazing how good it tasted and how much it helped soothe my nerves and how hungry I really was! I had been out of town the week before he went into the hospital and came home to going straight to his hospital bed so there was no food in my house and no time or energy to go grocery shopping. What a blessing it was to have friends bring by food!  One friend brought by an entire roasted turkey and huge loaf of homemade bread along with cookies.  Other treats were dropped off at our door.  Another friend offered to fix my family Sunday dinner the day after the funeral as she knew I would be exhausted and have had no time to shop or cook and I had a house full of family.  It was all such a blessing. The night of the memorial service we gathered at my brothers and enjoyed all the delicious food that had been dropped off at our homes the past few days.  One thing my sister in law had put together for us was today’s recipe for Chili Con Queso Dip.  We all stood around the bowl on the counter and devoured it. Several years ago we had a Haagen Grocery store near our home that carried my favorite Chili Con Queso Dip.  I loved it and was so sad when the store went out of business and I could no longer buy my favorite dip. When I tasted the Chili Con Queso Dip my sister in law had made that evening it tasted just like my favorite dip!  I couldn’t believe it and was so excited that I could now make this dip at home. Thank you Tracy!!! The dip is super simple and only has four ingredients and comes together in a matter of minutes!  It is 1 cup each of mayo, sour cream and grated cheddar cheese.  The only other thing you need is a package of Hidden Valley Fiesta Ranch Dip Mix.  Just mix it all together!   The only other thing you  need is some tortilla chips! This stuff literally disappeared in minutes.  Lucky for us, Tracy had enough ingredients to make a second batch.  I plan on keeping these ingredients on hand at all times! I am so glad to have this dip back in my life again!! Lemon Raspberry Mini Cheesecakes This Lemon Raspberry Mini Cheesecakes are the perfect size, the perfect flavor combination and the perfect dessert for Valentine’s Day. Despite it being February and still officially winter, my bulbs are breaking through the dirt and some of my plants have flower buds on them.  I think they are ready for spring.  I decided, if you can’t beat them join them so I’m breaking out my favorite spring time flavors today.  Lemon and raspberry are at the top of the list. These mini cheesecake bites are pretty and delicious and that is a winning combination and the Karo® Syrup adds the perfect amount of sweetness while adding to the creamy texture.  I love making food in bite-size form because not only do I think it tastes better, but it also makes it easier to share with others. With Valentine’s Day approaching it is the perfect time to share the love and share these sweet little treats.  What better way to show your love for someone special than with these Lemon Raspberry Mini Cheesecake Bites. I just used a muffin tin to create these cute little mini cheesecakes.  Line the muffin tin with cupcake liners and then amixture of graham cracker crumbs, butter and sugar go in the bottom. The cheesecake layer is a combination of cream cheese, Karo® Corn Syrup,  egg, cornstarch, sugar, lemon zest and lemon juice. A cookie scoop is the perfect size to fill the muffin tins with the creamcheese layer. After the little cheesecakes bake they are topped with raspberry pie filling and a fresh raspberry!  Leave them in the cupcake wrapper or take it off.  If you are sharing with someone the little wrappers make transporting them much easier!  Experiment with other topping and flavor combinations.  Blueberry and lemon would be yummy too! Baking is such a great way to show someone you care and these pretty little cheesecake bites are the perfect way to celebrate Valentine’s Day.  Bake a little extra to share the love. Lemon Raspberry Mini Cheesecakes   Print Prep time 20 mins Cook time 15 mins Total time 35 mins   Author: Leigh Anne Wilkes Recipe type: Dessert Serves: 12 Ingredients 3 whole graham crackers, (rectangles made of 2 squares) 1-1/2 tablespoons unsalted butter, melted 4 tablespoons sugar, divided 1 package (8 ounces) cream cheese, softened 1 tablespoon cornstarch 1 egg ⅓ cup Karo® Syrup 1 tsp lemon zest 1 Tbsp fresh lemon juice 1 can (21 ounces) raspberry pie filling fresh raspberries for garnish. Instructions Preheat oven to 350˚F. Line muffin tins with metal baking cups. Place graham cracker pieces into the bowl of a food processor fit with metal blade. Pulse until they form a fine crumb. Add 2 tablespoons sugar and butter and pulse until all the ingredients are evenly distributed. Place a heaping tablespoon of the crumb mixture in the bottom of each baking cup. Press gently to form an even crust. Set aside. Beat cream cheese, remaining 2 tablespoons sugar, lemon juice, lemon zest and cornstarch in the large bowl of an electric mixer until well mixed. Add egg and blend well. Add corn syrup. Beat until just blended. Pour filling into baking cups, dividing evenly. Bake for 15 minutes or until just set. Chill for 1 hour. Top with a spoonful of pie filling and a fresh raspberry Note: For a crisper crust, bake at 350˚F for 10 minutes before filling with cream cheese mixture.
