Strawberry Lemon Curd Cheesecake Tart This Strawberry Lemon Curd Cheesecake Tart is the perfect way to use those fresh summer strawberries. Our favorite way to start our weekend off is with a trip to one of our local Farmer’s Markets. This weekend we headed downtown to the Portland Farmer’s Market and the Oregon strawberries were out in force! My favorite kind is the Hood strawberries. They are so sweet and yummy. I picked up a pint of fresh berries and along with the berries that are ripe in my own garden I made today’s delicious dessert! I love having a berry patch in my own backyard that I can just walk out to and grab a handful of fresh, ripe berries. There is nothing better than a warm, sunripened berry. They just melt in your mouth. I also love the combination of strawberry and lemon. I really love the combination of lemon and just about anything but strawberries is at the top of the list. I experiment with a couple of different ways to make the filling for this tart but decided that the combination of cream cheese, whipping cream and lemon curd was pretty much perfection. The crust is almond flavored butter crust that is baked and then filled with the cream cheese mixture. The lemon curd cheese cream mixture is spread into the crust and then topped with sliced berries. I have these two amazing strawberry tools I use anytime I am working with strawberries. If you love strawberries and you don’t own these two things – you must! They are pretty much life changing when it comes to hulling and slicing strawberries. The strawberry huller and the strawberry slicer are amazing!! Seriously, get yourself one. After I sliced the strawberries and topped the tart with them I warmed up the remaining lemon curd and drizzled it over the top. More lemon goodness. You could also use strawberry jam if you prefer. After it is chilled and set up all that is left to do is, grab a fork! Some of my other favorite strawberry treats: Strawberry Cream Pie Strawberry Pizza Strawberry Sorbet Strawberry Lemon Curd Cheesecake Tart Print Prep time 20 mins Cook time 15 mins Total time 35 mins Author: Leigh Anne Wilkes Recipe type: Dessert Serves: 10 servings Ingredients Crust ½ cup butter, softened ⅓ cup granulated sugar 1¼ cups all purpose flour 2 Tbsp milk ½ tsp almond extract Filling 8 oz. cream cheese, softened ½ cup lemon curd 2 Tbsp whipping cream 2 Tbsp powdered sugar 1 tsp vanilla Glaze ⅓ C lemon curd, melted 2 cups sliced strawberries Instructions Preheat oven to 400 degrees F. Combine butter and sugar in a bowl, beat until light and fluffy. Add in flour, milk, and extract. Mix until dough comes together and leaves side of bowl. Press dough into bottom of 10 inch tart pan. Prick with fork Bake for 15 minutes or until lightly golden brown. Cool completely Filling Combine cream cheese and sugar. Beat until smooth. Add in whipping cream, lemon curd and vanilla. Spread mixture into cooled crust. Chill for 1 hour. Add slice strawberries Brush or drizzle on melted lemon curd. Cinnamon Toast Crunch Ice Cream Cinnamon Toast Crunch Ice Cream – One of your favorite cereal flavors in the form of ice cream! Summer has arrived in Portland. We have had more 80 degree temperature days in April and May than I can ever remember. I’m not complaining though! We’ve loved eating out on the patio every night and the warm weather had me craving some homemade ice cream so I decided to break out the ice cream maker for Mother’s Day. I was cooking for Mother’s Day for my mom and decided that homemade ice cream was the perfect dessert. We are big ice cream eaters in our family and I’m not sure I will ever eat ice cream again without thinking about my dad. You may remember we celebrated his life recently with an ice cream party! I was also craving my favorite California Orange Cake so I decided to make it too. It was Mother’s Day after all and you can never have too much dessert. I am a huge fan of cinnamon ice cream and you can’t really find it in the stores. Our favorite Portland ice cream spot, Salt & Straw, makes an amazing Snickerdoodle ice cream that I love. I am also a big fan of Cinnamon Toast Crunch Cereal and I thought it might be fun to add it into some ice cream. I started by infusing the milk with the cinnamon toast crunch cereal. I soaked 2 Cups of cereal in 1 1/2 C of whole milk for about 30-45 minutes. The best part of cereal is the flavored milk that is left at the end, isn’t it?!! On one of my trips to NYC I had some amazing ice cream that tasted like leftover cereal milk. It was so yummy and the idea totally worked in this recipe too. I then strained the milk from the cereal and threw the soggy cereal away! I combined the cereal infused milk with the other ingredients and put them into my ice cream maker. I wanted a little crunch in my ice cream but I was afraid the cereal would get soggy, so I sugared the sugar cereal – yes, I added more sugar. I used brown sugar and sugared it just like I do nuts and it worked perfectly. It made it taste even better and it didn’t get soggy in the ice cream. After the ice cream was done churning, I stirred in the sugared cereal and I put it into my favorite ice cream storage container and into the freezer. Of course when I got ready to serve it I had to add a little more cereal on top! Cinnamon Toast Crunch Ice Cream is the perfect answer to a hot summer or spring day! Some of my other favorite ice cream recipes: Circus Animal Ice Cream Cookies and Cream Ice Cream Key Lime Pie Ice Cream Cinnamon Toast Crunch Ice Cream Print Prep time 30 mins Total time 30 mins Author: Leigh Anne Wilkes Recipe type: Dessert Serves: 2 qts. Ingredients 3 C Cinnamon Toast Crunch cereal, divided 1½ C whole milk 1 C sugar 1 tsp cinnamon ¼ tsp salt 1½ C half & half 1½ Tbsp pure vanilla (use the good stuff) 2 C whipping cream ¼ C brown sugar extra cereal for garnish Instructions Put 2 cups of cereal into 1½ c of whole milk and allow it to sit for 30-45 minutes. Strain the milk from the cereal and discard the soggy cereal. Add the cereal infused milk, sugar, cinnamon, salt, half & half, vanilla and whipping cream together and pour into ice cream maker. Process according to manufacturers directions. While ice cream is churning, sugar your 1 C remaining cereal with brown sugar. Stir cereal and brown sugar together over medium heat in a frying pan until sugar melts. Stir to coat cereal with melted sugar. Place on a plate and allow to cool. Break into pieces. When ice cream is done churning, stir the sugared cereal into the ice cream and place in a freezer container and freeze until it hardens. Copycat Chipotle Guacamole This Copycat Chipotle Guacamole tastes just like the real thing! Trust me, I have had plenty of first hand experience!! Cinco de Mayo is tomorrow and if you make only one thing to celebrate, make it this Copycat Chipotle Guacamole. It is amazing! I love a good copycat recipe and this is a good one. It tastes just like the real thing. I am not a big lunch eater. Usually it is a protein shake but if I am out running errands anywhere in the vicinity of my local Chipotle restaurant I will make a stop for an order of guacamole and chips. Totally one of my favorite things for lunch and I usually have the whole thing finished by the time I get home. Yes, I eat in the car. Lucky for me they are opening a new Chipotle even closer to my house. Danger!! But guess what!? It is so easy to make at home and it tastes exactly the same. The ingredient list is short – avocados, jalapeno peppers, lime juice, red onion, cilantro and salt. Of course you will need a bag of chips to go with it. I only used one jalapeno but if you want a bit more kick, use a few more. Dice up your avocados, peppers, onions and cilantro. Add in the lime juice and salt and then mash it to your favorite guacamole consistency. I like mine, not too chunky and not too smooth. I like it just right! A bowl of guacamole and a bag of chips and I’m one happy girl!! Just grab a chip and dig in! Copycat Chipotle Guacamole Print Prep time 10 mins Total time 10 mins Author: Leigh Anne Wilkes Serves: 2 Cups Ingredients 3 ripe avocados, diced 1 jalapeno pepper, diced small ¾ C red onion, diced small ¾ C cilantro, diced Juice of 2 limes ¾ tsp salt Instructions Dice up avocados and add in lime juice and mash to desired consistency.
