Sunshine Orange Pie Sunshine Orange Pie lives up to its name, it tastes just like sunshine should. The winter gloom has arrived in the Pacific NW.  That means rainy days and overcast skies.  These kind of days get me dreaming about warm, sandy beaches and citrus.  Any kind of citrus will do, a lemon, lime or an orange! This Sunshine Orange Pie hit the spot and brightened my day even though there were clouds in the sky.  If you love a key lime pie, you are going to love this pie too!  I found this recipe over at Cook’s Country and they called it sour orange pie.  I guess there are such things as sour oranges but you don’t find them here in the Pacific NW so I just used regular navel oranges and let me tell you, there is nothing sour about this pie.  It is a bit of sweet sunshine in your mouth! This orange pie tasted delicious and it looked even prettier on my new blue and white dishes I found at Goodwill last week. Not only is there plenty of orange goodness in the pie, it is topped with some lovely oranged flavored whipped cream for even more orange goodness. So whether you  have sunshine or not where you live, grab a fork, close your eyes, take a bite and you will have sunshine! Printable Recipe for Sunshine Orange Pie Sunshine Orange Pie   Print Prep time 20 mins Cook time 30 mins Total time 50 mins   Author: LeighAnne Wilkes Serves: 8 servings Ingredients Crust 20 Lorna Doone Shortbread cookies or 5 oz. of other cookies 3 Tbsp sugar pinch of slat 4 Tbsp butter, melted Filling 14 oz. can of sweetened condensed milk 6 Tbsp frozen orange juice concentrate, t hawed 4 egg yolks 2 tsp grated lemon zest plus 6 Tbsp juice (about 2-3 lemons) 1 tsp grated orange zest pinch of salt Whipped Cream 1 cup heavy cream 2 Tbsp sugar ½ tsp grated orange zest Instructions Crust Preheat oven to 325 degrees F. Process cookies in food processor until finely ground. Add in sugar, salt and melted butter. Stir to combine. Press into the bottom and up the sides a 9 inch pie plate. Use the bottom of a measuring cup to flatten the crust. Bake the crust for 12 to 14 minutes. Let cool completely, at least 30 minutes. Filling Mix together all the ingredients until combined. Pour into cooled crust. Bake for 15 to 17 minutes or until the center jiggles slightly when shaken. Let cool completely and refrigerated for at least 3 hours or cover with plastic wrap and refrigerate over night. Whipped Cream Whip the cream with sugar and orange zest in mixer until peaks form. Roasted Garlic Artichoke Dip The addition of roasted garlic to this Roasted Garlic Artichoke Dip takes the flavor factor over the top. I lost track of how many times I made this Roasted Garlic Artichoke Dip over the holidays.  It is definitely my favorite appetizer of all times!  I’ve been making it for years and I first posted it here on the blog back in February of 2008, just a few months after I started my blog.  It was definitely in need of a Recipe Redo and I needed another excuse to make it! This is probably my most requested appetizer when I am asked to bring something to a party and it is always the first things to disappear at the party.  I have several other artichoke dips here on the blog.  There is Artichoke and Spinach Dip  and Artichoke Spinach Dip with Pecans both of which are yummy and quite lovely but I have to admit, this one is my favorite. This particular artichoke dip has a secret ingredient which is roasted garlic.  Don’t leave this part out and don’t think that substituting regular diced garlic will do it.  You need and want the roasted garlic.  Making your own roasted garlic is easy.  Just slice off the top of a head of garlic, explosing the cloves.  Place it on a piece of foil and then drizzle with some olive oil.  Wrap it up and then bake for about 45 minutes at 375 degrees F.  You want the garlic to get golden brown and soft so that you can just squeeze it right out of the skin. You use a combination of Mozzarella cheese and Parmesan Cheese along with the roasted garlic, mayonnaise and chopped artichoke hearts. My favorite part of the dip is the brown, crunchy edges that form around the dip as it bakes.   I usually eat my way around the edges. I love to serve the dip with a sliced baguette but it works with crackers or veggies too or you can just use a spoon!     Roasted Garlic Artichoke Dip Roasted Garlic Artichoke Dip   Print Prep time 10 mins Cook time 20 mins Total time 30 mins   Author: Leigh Anne Wilkes Recipe type: Appetizer Serves: 6 servings Ingredients 1 (6.5 oz.) jar marinated artichokes, drained and chopped 1 cup regular mayonnaise 1 cup freshly grated Parmesan cheese ½ cup grated mozzarella cheese 1 head roasted garlic, mashed salt and pepper to taste. Instructions Mix the above together Place in a 1 quart glass dish Bake 20 minutes or until bubbling in a 375 degree oven Serve with pita bread, baguette, crackers or vegetables To Roast Garlic: Slice off the top of the head of garlic, exposing the cloves. Place on a piece of foil and drizzle with olive oil. Wrap the foil around the garlic. Bake in a 375 degree F oven for about 45 minutes or until the garlic is golden brown and soft.
