Nacho Loaded Potato Skins These Nacho Loaded Potato Skins are the perfect combination of two favorite game watching foods! Sure to be a winner no matter who wins the ball game! I originally did this recipe in preparation for the Super Bowl which may have come and past but if your house is like my house, there is always another ball game to watch! For my sports loving boys (and I have three of them) the second most important thing about a ball game, besides whether their team wins or not, is what there is to eat. My boys like their football watching food. Nachos and Potato Skins are always a hit at our house so I decided to combine the two into one delicious football watching treat. But, if you don’t like football (like me), you’re still going to love these Nacho Loaded Potato Skins! No football watching required to enjoy a few of these. I had some leftover shredded beef and black beans in my refrigerator so it made these even easier to make. You can use any leftover meat you might have on hand such as shredded chicken, pork or beef. Refried beans work great but I prefer black beans and this is my favorite black bean recipe. You can always use them straight out of the can too! Some shredded cheese, salsa, guacamole, green onion, black olive and tortilla strips are all great toppers. And of course, you will need some potatoes. I like to use russett potatoes and wrap them in foil and just bake them in the oven at 400 degrees F until they are cooked through. Let them cool a few minutes so you don’t burn yourself and then cut them in half and scoop out the insides. Leave a layer of potato, about 1/4 inch or so. I then brush the inside of the potato with melted butter and give it a sprinkle of garlic salt and bake them, inside side up at 400 degrees F for about 10 minutes. Then just fill them up! I start with the beans, then the meat and then add the cheese and pop them back in the oven to let the cheese melt for a few minutes.Then add on your other favorite nacho toppings. I shared some of these yummy potato skins with the teenage boys next door. Their mom texted and told me they would be perfect for the Super Bowl. I couldn’t agree more! But please, don’t just make these babies once a year for the big game day. Enjoy them year round! Dress them up, dress them down, dress them however you like them! Bake in a 400 degree F oven until potatoes are soft and cooked through. Allow potatoes to cool until they are cool enough to hand.e Cut in half lengthwise. With a spoon scoop out the inside leaving a ¼ inch of potato. Brush insides of potato with melted butter and sprinkle with garlic salt Bake for 10 minutes in 400 degree oven. Apple Pear Walnut Crisp Apple Pear Walnut Crisp is delicious and has amazing flavor and texture thanks to the sweet fruit and the crunch of the walnuts. This post is sponsored by the California Walnut Board but all opinions are my own. It doesn’t get much better than a warm, delicious fruit crisp baked in a cast iron pan topped with ice cream and caramel sauce. I love the sweet softness of the fruit and the crunch of the topping. Thanks to the addition of chopped walnuts and walnut meal in this recipe you’ve got both flavor and crunch. My husband loved the addition of the walnuts and is still talking about it. You can cook this in any baking dish you like if you dont’ have a cast iron pan but I’m a big fan of cast iron. Instead of using just flour, sugar and oats for the topping I added in some walnut meal (which is basically ground up walnuts). It was a good decision. I first coated the sliced apples and pears with some sugar, cornstarch, cinnamon and a little lemon juice. I like to use Granny Smith apples and Anjou pears. Some pears bake better than others and the anjou hold up better when baked than other pears. Then I added the topping of walnut meal, flour, brown sugar, oats, cinnamon and butter. Cut the butter into the mixture until it forms a coarse crumble. If you want a delicious gluten free dessert, substitute the flour for more walnut meal and be sure you are using a certified gluten free oatmeal. You can purchase walnut flour or meal or you can make your own by pulverizing walnuts in the food processor. Just don’t process too long or you’ll end up with walnut butter. Just pulse until you get the consistency you want. Sprinkle the crumb mixture over the top of the fruit. I then sprinkle some additional chopped walnuts over the top. Bake at 350 degrees F for about 40-45 minutes or until the apple mixture is bubbling and the topping is golden brown. Of course you can grab a spoon and dig in at this point or you can make it even better and add some vanilla ice cream and a drizzle of caramel sauce. Yes, please!Now you can grab a spoon and dig it! Printable Recipe for Apple Pear Walnut Crisp Apple Pear Walnut Crisp Print Prep time 20 mins Cook time 45 mins Total time 1 hour 5 mins Author: Leigh Anne Wilkes Recipe type: Dessert Serves: 4-6 servings Ingredients 3 apples, granny smith, peeled and sliced into ¼ inch slices 2 pears, anjou, peeled and sliced into ¼ inch slices ½ cup granulated sugar 2 Tbsp cornstarch 1 tsp cinnamon pinch of salt 1 Tbsp lemon juice Topping ¾ cup walnut meal or flour ¼ cup all purpose flour ½ cup brown sugar ½ cup quick cooking oats ½ cup walnuts, coarsley chopped ½ tsp cinnamon ½ cup butter, chilled and sliced caramel sauce ice cream Instructions Preheat oven to 350 degrees F. In a bowl, toss together sliced fruit, sugar, corn starch, cinnamon and lemon juice. Place fruit in the bottom of a 10" cast iron pan or baking dish. In another bowl, combine flour, brown sugar, oats, cinnamon and sliced butter. Cut butter into mixture until a coarse crumb forms. Add in chopped walnuts Sprinkle mixture over the top of fruit. Bake for 45 minutes or until fruit mixture is hot and bubbly and topping is golden brown.
