Cowboy Caviar Cowboy Caviar, Texas Caviar, black bean salsa, or Southwestern bean dip, or whatever you’d like to call it, this is a classic and makes frequent appearances at summer cookouts. Don’t ask me why this is called Cowboy Caviar because I have no idea.  What I do know though is that it is yummy.  I got the recipe from my sister in law Jayna who fixed it for Grandma and Grandpa Wilkes’ 80th birthday party a few years ago. It has become a favorite summer appetizer at our house, especially when tomatoes are in season. Once I took it to a potluck and so did two other women.  They were all slightly different versions and I have to say – I liked this version the best. It has a bit of chopping involved – tomatoes, avocado, cilantro and green onions but goes together quick.  I like to refrigerate it for a while before serving so all the flavors can meld together.  We used tortilla chips to dip. Be sure and add the avocado in right before serving so it doesn’t turn brown.  Do you have a favorite summer appetizer? Boccone Dolce This boccone dolce is heaven on a plate! My favorite dessert ever and the one I order everytime we go to Papa Haydens restaurant here in Portland.  Every time!! When Jim asked me what I wanted for Mother’s Day dinner I tried to keep the menu as easy as possible since his culinary skills are limited to breakfast and what he can throw on the grill.  I told him I would be in charge of dessert.  I had been planning for weeks to make my ALL TIME favorite dessert – Boccone Dolce or “Sweet Mouthful” in Italian. A local restaurant, Papa Haydens, that is famous for their desserts, serves this amazing dessert.  I order it EVERY time I go there despite the dozens of choices on the menu.  Not wanting to wait until we went to the restaurant to enjoy Boccone Dolce I googled the recipe and found this great version. Boccone Dolce is a combination of melt in your mouth meringue, strawberries, whip cream and chocolate – YUM!  Don’t let the picture of the dessert or the mention of meringue scare you away.  It is actually very easy to make! The first step is making the meringue layer.  This meringue is not like the soft meringue that is on lemon meringue pie – this meringue is crisp and dry and melts in your mouth when you bite into it!  Be sure and use egg whites at room temperature and a clean bowl in order to get your egg whites to whip properly.  Also make sure none of the egg yolk gets in with the whites. You can use any berries that are in season – strawberries, raspberries, blackberries, blueberries (remember I live in berry heaven!) and if no berries are in season you can also use bananas.  (except if you are me and you have texture issues and don’t eat bananas!)  For Mother’s Day I used a combination of strawberries and raspberries. Here are my meringue shells – The fun part is assembling it. On the meringue layer add a layer of whipped cream and fruit and then place the other meringue on top and layer it with whipped cream and more fruit and repeat! On the very top, pile on the berries.  It looks so pretty! Now this dessert looks super fancy and impressive but it really is easy to make.  The hardest part of the whole thing is cutting it. This dessert is not the easiest to cut – I find using a serrated bread knife works well and use a sawing like motion.  Even if it falls apart a bit when you slice it, it is still going to taste amazing.  It’s almost too pretty to eat but please, eat it!  And eat a piece for me too. Gradually beat in sugar and continue beating until meringue is stiff and glossy. With a rubber spatula, spread meringue evenly and equally over top of each parchment paper circle. Bake approximately 2 hours or until meringue becomes bisque colored. NOTE: The low temperature will prevent them from browning too quickly. Then turn off oven, open oven door, and let the meringues "rest" in the oven another 15 minutes. Remove from oven and carefully peel off parchment or waxed paper. Put cake on racks to dry until thoroughly cool. Once cooled, meringues may be wrapped in plastic wrap and frozen (if desired). NOTE: I wrap each meringue in several layers of plastic, then stack (gently!) in a large plastic container for freezing. Remove from freezer at least an hour before assembling. S’mores Dip Recipe S’mores Dip is a fun way to enjoy all the flavor of a traditional s’mores without a fire! One of our favorite things to do when we spend our week at the beach each summer is to watch the sunset on the beach, build a fire and make s’mores. It’s pretty much perfection in my book. I am definitely one of them.  One of my favorite summer activities is s’mores making.  In fact, we have two fire pits in our back yard because we like s’mores so much.  Several years ago we included a s’mores bar in my daughters 16th birthday party and it was a total hit. But since we can’t always build a fire to make s’mores, S’mores Dip is the perfect solution for all you s’mores fans out there. I love the flavor of s’mores but to be honest, I don’t always want the fuss and mess and the left over smoky smell that gets in my  hair from building a fire and making s’mores!  Because of that, I’ve come up with several “non fire” s’mores dessert ideas that take care of that s’mores craving and keep my  hair smelling good! This s’mores ice cream is one of my favorite because not only does it have all the yumminess of a s’mores but it also has ice cream!  Can’t go wrong with that.  There is also Chocolate S’mores Pie,  Skillet S’mores, S’mores No Churn Ice Cream and S’mores Cookies!  Yes, we have a thing with s’mores! S’mores Dip is perfect party fare and will be the perfect thing to take to all those upcoming summer BBQ’s and pool parties.  The dip is a combination of a marshmallow mixture and a chocolate mixture and then you swirl the two together.  Garnish with some extra marshmallows and graham cracker crumbs and then use graham crackers to start dipping with. I used instant chocolate pudding but next time I think I will use the chocolate fudge pudding to make it a bit more chocolatey.  I love how light and fluffy the dip is.  Mix yourself up a big bowl and start dipping! Add in ⅔ cup of cream an beat until fluffy. Fold in mini mashmallows. In another bowl, beat together remaining heavy cream and pudding mix until light and fluffy. Scoop each mixture into a serving bowl, alternating mixtures and then use a kniff to swirl them together. Homemade Vanilla Ice Cream with Chocolate Chip and Cookies & Cream Versions This homemade vanilla ice cream is my go to ice cream recipe.  I use it as a starting point for all my favorite flavored ice creams.  It is pretty much foolproof.This recipe was originally posted in August 10, 2012, the day my son was getting married.  I can’t believe they’ve been married 5 years!  This recipe is definitely worth repeating.  I use this vanilla ice cream recipe ALL the time and add in our favorite flavors. Today is the day.  My son Clark and his lovely bride Jessica are getting married.  We are so excited and can hardly believe the day has arrived.   I thought today’s recipe for homemade vanilla ice cream was pretty appropriate because this is probably what we are doing right now….. Yes, that would be melting.  It is suppose to be 115 degrees today in Phoenix.  I am not sure this Northwest, use to 70 degree summer days girl is going to be able to handle this!! I am just going to keep thinking about this yummy vanilla ice cream and it will keep me cool.  Maybe I’ll even find me some Arizona ice cream to help cool me off!! Last week I posted a recipe for some pretty delicious Key Lime Pie Ice Cream.  I mentioned that I used my basic vanilla recipe as the base.  Several of you asked for the recipe which I thought was on the blog.  After 5 years of sharing recipes it is sometimes hard to remember which recipes I have shared and which I haven’t.  Guess I hadn’t shared this one so today I am fixing that problem.I have to admit, when it comes to ice cream flavors, I love me some good vanilla ice cream.  Call me plain jane, call me boring but I love vanilla ice cream. The key to really good vanilla ice cream though is to use a high quality, pure vanilla.  None of that imitation stuff. Every once in a while though I get a little adventurous.    I go for chocolate chip ice cream!  Living on the edge here. Chocolate Chip Ice Cream For this homemade version of chocolate chip ice cream I just used the basic vanilla ice cream base and once the ice cream was set up I tossed in about 1 cup of mini chocolate chips.  I prefer the minis over the full size.  Sometimes you end up with too much chocolate otherwise and you don’t want to overpower the beauty of the vanilla. And then when I am feeling really wild I go for a Cookies & Cream version! Cookies & Cream Ice Cream For this version all you need are some crushed up Oreo cookies or the chocolate cream cookie of your choice.  Again, for my 2 qt. recipe I use about 1 cup of crushed cookie.  I also crush up a cookie or two to sprinkle on top. The possibilities are pretty much endless here.  Thinking some candy bar in the ice cream would be pretty tasty too.  What’s your favorite flavor of ice cream?  Are you a plain jane vanilla girl like me??   Homemade Vanilla Ice Cream with Chocolate Chip and Cookies & Cream Versions   Print The best vanilla ice cream - I use this as a base for lots of different flavors. Ingredients 1½ C whole milk 1½ C sugar ¼ tsp salt 1½ C half & half 1½ Tbsp pure vanilla (use the good stuff) 2 C whipping cream For variations: add in 1 c mini chocolate chips or 1 c crushed Oreo cookie Instructions Mix together all ingredients and pour into 2 qt. ice cream maker. For this version all you need are some crushed up Oreo cookies or the chocolate cream cookie of your choice.  Again, for my 2 qt. recipe I use about 1 cup of crushed cookie.  I also crush up a cookie or two to sprinkle on top.

Homemade Vanilla Ice Cream with Chocolate Chip and Cookies & Cream Versions
 
The best vanilla ice cream - I use this as a base for lots of different flavors.
Ingredients
  • 1½ C whole milk
  • 1½ C sugar
  • ¼ tsp salt
  • 1½ C half & half
  • 1½ Tbsp pure vanilla (use the good stuff)
  • 2 C whipping cream
  • For variations: add in 1 c mini chocolate chips or 1 c crushed Oreo cookie
Instructions
  1. Mix together all ingredients and pour into 2 qt. ice cream maker.
  2. Follow manufacturer's directions.
  3. After ice cream has set up, stir in add in (mini chocolate chips, crushed cookies etc.)
