Today I am sharing a Bananas Foster Trifle which is a combination of English trifle and Bananas Foster, a fun twist on two classic desserts.

What is Bananas Foster?

Bananas Foster is an American dessert that originated in New Orleans and is often made table side and flambeed.  We’re not going to be setting anything on fire here though!  Bananas Foster is a combination of bananas covered in cooked butter and brown sugar.  Pretty much heaven!  Alcohol is often added and then it is set on fire – thus the flambe!  It is most often served over ice cream or as a crepe filling.

How to Make Bananas Foster Trifle

First, you need to pick your container.  I decided to go with individual servings of Bananas Foster Trifle and the round shortbread cookies were the perfect fit for my dessert dishes.

The next essential ingredient of trifle is custard.  I made my custard from scratch with the recipe below, a traditional English custard.  You can also use vanilla pudding but pudding is much sweeter than custard. Place a layer, about 2 Tbsp of custard over the shortbread cookie.

The next layer is the delicious Bananas Foster sauce.  Then just repeat with another layer of shortbread, custard and Bananas Foster sauce.

The final layer is a topping of freshly whipped cream, a spring of peppermint and another Walkers Shortbread cookie for garnish!

Bananas Foster Trifle

Bananas Foster Trifle is a delicious dessert that has layers of goodness.  A shortbread cookie layer, custard and delicious bananas cooked in butter, brown sugar and cinnamon!

Custard

  • 2 cups whole milk
  • 1/4 cup heavy whipping cream
  • 4 egg yolks
  • 4 Tbsp granulated sugar
  • 1 tsp vanilla
  • 2 Tbsp cornstarch

Bananas Foster Sauce

  • 1/2 cup butter
  • 1/2 cup dark brown sugar
  • 1/4 tsp cinnamon
  • 6 firm bananas (peeled and cut into rings)
  • 12 Walkers shortbread cookies
  • 1/2 cup heavy whipping cream (whipped)

Custard

  1. Bring milk and cream to a simmer on low heat.

  2. Mix together sugar and cornstarch in a bowl. Add in egg yolks and mix well.
  3. Slowly add some of the warm milk into the egg/sugar mixture, stirring so the egg doesn’t cook. Add in remaining egg mixture.

  4. Add in vanilla.  Return mixture to saucepan and stir until thickened. Chill.

Bananas Foster Sauce

  1. In a skillet over medium heat, melt butter with sugar and cinnamon.  Add sliced bananas to skillet and cook for about 2 minutes.  Stirring to coat bananas with sauce.

Assembly of Trifle

  1. Place one shortbread cookie in bottom of individual serving bowls.  Add 2 Tbsp custard and a few spoonfuls of bananas foster sauce.  Repeat again starting with another cookie.

  2. Top with freshly whipped cream and an additional shortbread cookie

Pumpkin Pie Shake This Pumpkin Pie Shake is the perfect way to use up leftover pumpkin pie.  If you don’t have leftover pie, make or buy a pie just so you can make Pumpkin Pie Shakes! The first time I saw a pumpkin pie shake on a menu, I thought, YUCK!   I love my milkshakes, but I don’t like pumpkin pie.  And the thought of a piece of pie in a milkshake was just a little too weird for me. Well,  I have quickly changed my tune!! I first saw the idea of a pie shake on the menu at a restaurant in Provo, Utah.  They had all different flavors and combos.  The first one I ever tried was an Oreo Mint Pie Shake and it was delish.  I discovered that the idea of combining a piece of pie and a milkshake was pretty much brilliant. They put the whole piece of pie, crust and all, into the blender with ice cream. So maybe the idea of a Pumpkin Pie Shake wasn’t so strange after all?! How to make a Pumpkin Pie Shake I decided I didn’t want to wait until we had leftover Thanksgiving pumpkin pie to give it a try so  I bought a frozen pumpkin pie!  First, I baked the pie and then cut it into slices and froze it again. I chopped up the frozen pie and threw it in the blender along with ice cream, milk and blended it up! Guess what?  It is awesome!!  Remember,  I don’t even like pumpkin pie but a pumpkin pie shake  is amazing!  For me, it is the texture of pumpkin pie I don’t like but I like the flavor so a pumpkin pie milkshake is perfect. You can also use pumpkin pie made from scratch.  This would be a fun way to enjoy your leftover Thanksgiving pie.   But the quick and easy store bought pie is pretty delicious too! So when you have some leftover pumpkin pie – try something new!  Pop it in the freezer and then make yourself a Pumpkin Pie Shake – you won’t regret it!!  The possibilities are endless – Banana Cream Pie Shakes, Chocolate Cream Pie Shakes, and Coconut Cream Pie Shakes just to name a few!  If you have other pies leftover from Thanksgiving, give them a try too! Pumpkin Pie Thanksgiving isn’t Thanksgiving without a classic pumpkin pie.  It doesn’t matter how many other pies there are at Thanksgiving dinner, pumpkin pie is required.  Top this pumpkin pie recipe with cinnamon whipped cream for the perfect holiday pie. This year we will celebrating Thanksgiving in Utah with all of our kids.  We have a lot of extended family there too so in order to see everyone and do a little celebrating with everyone, we will be having a Pie Night, the night before Thanksgiving.  It was my son’s idea and it makes perfect sense.  On Thanksgiving day you fill up on so much amazing food that you end up with no room for pumpkin pie, or any pie.  So this year, we are going to enjoy our pumpkin pie the night before! I have to admit I’m a little bit more of a fruit pie fan, I can’t pass up a lemon pie or berry pie in any shape or form but I’ve learned to appreciate pumpkin pie as I’ve gotten older.  My husband is the big pumpkin pie fan in our family though.  As a child though his love of Thanksgiving and pumpkin pie took a major hit when he went early to his Grandma’s house to help her get ready for Thanksgiving and discovered that the pumpkin pie he loved so much was really made with Hubbard squash.  He managed to recover from the shock though and continues to enjoy pumpkin pie today. This pumpkin pie is just the right combo of pumpkin and spice and the texture is perfectly smooth.  I got a little fancy with my pie crust and had fun adding some pastry crust leaves to dress it up. I just gave them an egg wash bath before baking the pie. My perfect pie crust recipe makes enough for two pie crusts so I used the second one to make the leaves. I love ice cream with most pies but with pumpkin pie I prefer whipped cream.  I usually add a little cinnamon to the whipped cream along with some sugar for a special touch.  Your guests will love cinnamon whipped cream. Mix together pumpkin puree and eggs until smooth.  Add in milk, seasonings and stir to combine. Pour into unbaked 9″ pie crust.  Bake for 15 minutes.  Reduce heat to 350 degrees F and bake for another 30-40 minutes or until pie is set in the middle.  Insert a knife in the middle of pie to test for doneness, should come out clean.  Allow to cool completely before serving. For the pie crust leaves, cut leaves out of second pie crust dough and place on a baking sheet.  Brush with an egg wash and bake for 10-12 minutes or until golden brown.  Place around the edge of the finished, baked pie. Cinnamon Whipped Cream In a medium bowl, beat together the cream, sugar, vanilla, and cinnamon with a  mixer on medium speed until soft peaks form.  Refrigerate until ready to serve. Pumpkin Pie Recipe

Pumpkin Pie

  • 1 15 oz. pumpkin puree
  • 2 egg yolks
  • 2 tsp vanilla extract
  • 14 oz. sweetened condensed milk
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 9 inch unbaked pie crust (see notes for link to recipe)

Cinnamon Whipped Cream

  • 1 cup heavy whipping cream
  • 3 Tbsp Sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  1. Preheat oven to 425 degrees F.

  2. Mix together pumpkin puree and eggs until smooth.  Add in milk, seasonings and stir to combine.

  3. Pour into unbaked 9″ pie crust.  Bake for 15 minutes.  Reduce heat to 350 degrees F and bake for another 30-40 minutes or until pie is set in the middle.  Insert a knife in the middle of pie to test for doneness, should come out clean.  Allow to cool completely before serving.

  4. For the pie crust leaves, cut leaves out of second pie crust dough and place on a baking sheet.  Brush with an egg wash and bake for 10-12 minutes or until golden brown.  Place around the edge of the finished, baked pie.

Cinnamon Whipped Cream

  1. In a medium bowl, beat together the cream, sugar, vanilla, and cinnamon with a  mixer on medium speed until soft peaks form.  Refrigerate until ready to serve.
