4th of July Fruit Pizza This 4th of July fruit pizza is perfect for any patriotic holiday, when you want to show off your red, white and blue, or when you just want a delicious berry treat! If you are planning a BBQ or party for the next week or anytime this summer and need a fun, patriotic dessert you might want to make 4th of July Fruit Pizza  This is actually a recipe I shared  before – Strawberry Pizza.  It is one of our family’s favorite desserts to make during strawberry season so I decided to change it up a little bit and make it more patriotic by adding blueberries for a red white and blue color scheme!  My kids just gobble this one up. How to Make Fruit Pizza The base of this fruit pizza is a shortbread like cookie.  It is light and tender. Use a pastry blender to mix together the flour, powdered sugar and butter.  Then use your hands to combine it into a ball. Roll out the dough on parchment paper into your desired shape and bake.  I have made this patriotic dessert round and also rectangular so it looks more like a flag. Mix together the softened cream cheese, sugar, lemon juice and vanilla for the cream cheese layer. Spread it in an even layer on the cookie layer, leaving about 1/4 inch of cookie showing.  I like to use an offset spatula to spread the cream cheese. In a small sauce pan, combine the pureed strawberries, sugar and cornstarch.  Cook for about 6-8 minutes until it turns thick and glossy.  Allow it to cool before adding it to the top of the cream cheese layer. Layer your strawberries and berries to form the stripes of the flag. The only thing left is to decide how to cut it, we always cut our pizza into squares but you can also cut it into triangles! How to Make Fruit Pizza

Filling:

  • 1 8 oz. cream cheese (room temperature)
  • 1/2 tsp. vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 tsp. lemon juice

Topping;

  • 1 cup strawberries (mashed)
  • 4 Tbsp. granulated sugar
  • 1 Tbsp. cornstarch
  • 1 qt strawberries (sliced)
  • 1-2 cups blueberries

Crust:

  1. In a medium bowl, combine flour, sugar and butter
  2. Form into a ball with hands and roll out into your desired shape. Place on parchment paper on a baking sheet.

  3. Bake at 325 degrees for 15 minutes. Cool

Filling:

  1. In a medium bowl, combine cream cheese, vanilla, sugar and lemon juice
  2. Spread on cooled crust

Topping:

  1. In a saucepan over medium heat, combine strawberries, sugar and cornstarch
  2. Simmer until thick and glossy
  3. It will turn from cloudy to clear. Cool
  4. Spread on top of cream cheese filling
  5. Cut fresh strawberries crosswise and place on fruit pizza to make stripes. Add in blueberries between the stripes.

Next to Christmas, my favorite holiday is the 4th of July!  I love the opportunity to celebrate our amazing country but I also love a good red, white and blue color scheme.  Not only do I like to decorate with it and wear it but I love to match my food to the color scheme.  A patriotic charcuterie board is the perfect way to do that!  It will be the hit of your party and not only will your guests love eating it but it will be a festive and colorful addition to your table. How to make a Patriotic Charcuterie Board Pick an appropriate board. You don’t have to use a board made specifically for charctuerie, although there are lots of lovely ones out there. You can use a wooden cutting board you already have in your cupboard.  I have used a cookie sheet, a large piece of tile leftover from a remodel and a plate.  For my 4th of July appetizer I used a white enamel pan with a red edge to add to the color scheme. Start your board with your meats and cheeses. They are the backbone and centerpiece of any good charcuterie board. Select your cheeses. Use a mixture of soft and hard cheeses. For this board I used Manchego Cheese,  Double Cream Brie and a soft goat cheese all from Primo Taglio®  which I are available exclusively at my local Albertsons and Safeway store.  You will find it in the deli section. The Primo Taglio products are all made with the best ingredients and you will find a nice assortment of  cheeses  that are perfect for your patriotic cheeseboard.  The cheeses have no artificial flavors or colors and are made with high quality ingredients, old world recipes and are naturally aged for up to 2 years which gives you great flavor and texture. Select your meats. Charcuterie is a French word for meat. Two of my favorite meats to use on a cheeseboard are salami and prosciutto.  But you can also use turkey, roast beef or any other thinly sliced meat.  I love that Primo Taglio prosciutto has no msg or fillers. You want a combination of sweet and savory items on your charcuterie board. Since this is a 4th of July appetizer, I used an assortment of red and blue fruits for the sweet.  Red grapes, cherries, raspberries, blueberries and some delicious strawberry salsa worked perfectly.  An addition of some chocolate is always a good idea too!  For my savory items I always include some kind of nut, marcona almonds are one of my favorites but almonds, cashews, hazelnuts, and pistachios are great too. Something to dip into. I like to include something like a hummus or salsa that people can dip their cracker into or add a spoonful of with their meat and cheese.  To go with the red, white and blue theme, I used a bowl of my yummy Strawberry salsa. Add a variety of breads, crackers and chips.  Of course, you need something to put that meat and cheese on so I always fill in around everything else with sliced baguette, crackers and chips.  Use a variety of shapes and colors for interest.  Blue corn chips worked great with my color scheme and were perfect for dipping into the strawberry salsa. How much meat and cheese do I need? I suggest 3 different cheeses when you are serving 4-6 people.  If you are serving more add an additional cheese for every 2-3 people. I use 2 meats for 4-6 people adding in an additional meat for every 2-3 additional people. Plan on 2 oz. of meat and 2 oz. of cheese per person. Strawberry Cream Pie Strawberry Cream Pie is the perfect summer time dessert. A delicious creamy filling topped with fresh strawberries and a strawberry glaze June is strawberry season here in Portland and this year the strawberry crop has been awesome.  Our own little strawberry patch in the garden has been producing like crazy and every morning I can go out and pick a bowl full.  Because of that I’ve been able to make a lot of our strawberry favorites like that Strawberry Pizza I shared a few weeks ago and Fresh Strawberry Ice Cream. You have options when you make this delicious strawberry cream pie.  You can make it with a graham cracker crust or with a pastry crust.  I prefer a graham cracker crust but if you want to use a pastry crust be sure and use my Perfect Pie Crust Tutorial and check out the video at the end of the post.  They both are delicious, you’ll have to try it both ways and let me know. This particular strawberry pie has an added surprise in it which is a delicious layer of cream cheese filling! This recipe is from my friend April and since she first brought it to a party at our house years ago and it has become a regularly requested pie around our house. It is always on the menu for Father’s Day. There are 3 steps to this pie. The crust, the glaze and the filling.  It does need to chill for 3 hours so plan ahead. How to Make a Strawberry Cream Pie Make a graham cracker crust.  You can buy a premade one at the store but it is so easy to make at home and so much better.  You can follow my graham cracker crust tutorial for more details. Mix together the cream cheese filling.  It is a combination of cream cheese, whipped cream, sugar and vanilla.  Start with softened cream cheese. This filling is so good, I could eat it by itself but adding the berries is even better. Spread it onto the graham cracker crust and let it chill in the refrigerator for about 30 minutes to set up a bit. Arrange whole berries on top of cream cheese mixture pressing them lightly into the cream cheese layer.  Since the berries came from my garden they were not all perfect and uniform like the ones you may find in the story but they were so delicious! Make your glaze, which is a combination of mashed strawberries, water, cornstarch and sugar. Stir the glaze over medium heat until it turns shiny and glossy.  Stir constantly so it doesn’t burn.  Allow it to cool until room temperature and pour it over the strawberries.  Chill pie until ready to eat, at least a couple of hours. All that is left to do is grab a fork and dig it! This pie is a sure sign it is summer at our house.  When one of my kids saw the photo on Instagram I received a test asking that I had to make it again when they came home to visit!  You won’t find any argument from me! Check out these delicious strawberry desserts: Strawberry Sour Cream Cake Strawberry Pizza Berry Almond Butter Cake Strawberry Cream Pie Recipe Strawberry Cream Pie Delicious creamy filling, fresh strawberries, and a yummy glaze makes this the perfect strawberry cream pie recipe. Graham Cracker Crust 1 1/4 cups graham cracker crumbs (this is one package of graham crackers, 8 sheets) 1/4 cup sugar 6 Tbsp. butter (melted) Pastry Crust 1 1/4 C flour 1/4 C butter 1/4 C shortening pinch of salt ice cold water (add teaspoon by teaspoon until right consistency has formed) Glaze: 1 C strawberries (mashed) 1 C sugar 3 Tbsp. cornstarch 1/2 C water Cream Filling 8 oz. cream cheese (softened) 1/2 C sugar 1 tsp. vanilla 1 C heavy cream (whipped) 4 C whole strawberries Graham Cracker Crust Combine the above ingredients and press firmly into a 9 inch pie plate. Bake at 375 degrees for 5-8 minutes or until the edges are lightly browned. Cool. Pastry Crust Place flour, salt, butter and shortening in bowl. Use your hands to combine ingredients until small pebbles form Add cold water a teaspoon at a time until the dough begins to hold together and form a ball. Do not over handle the dough. Dough should be soft, moist but not wet. Place ball of dough onto wax paper and flatten. Place another piece of wax paper over the top and roll out the pastry into a circle. If your pie pan is 9 inch make sure your circle is bigger than 9 inches so you have enough for the edging.. Remove the top layer of wax paper and place pastry into pie tin. Remove other piece of wax paper and press pastry into pan. Use your fingers to crimp the edge of the crust. Freeze for 30 minutes to firm up the pastry. This helps prevent pastry from shrinking during baking. Prick the bottom of crust to prevent bubbling during baking. Bake at 400 degrees. For the first 10-12 minutes keep the edges of pie covered with foil and then remove for the last 15 minutes. Bake until golden brown. Glaze Crush 1 cup strawberries. Combine 1 cup sugar and cornstarch in small saucepan. Add water and crushed strawberries. Cook and stir over medium heat to boiling, stir constantly until clear and slightly thickened. Cream Filling Blend cream cheese and sugar. Stir in vanilla. Fold in whipped cream. Spread evenly in cooled crust. Refrigerate Place whole strawberries stem side down on top of creamed filling, pressing slightly. Spoon glaze over the berries. Chill for 3 hours. This filling is so good, I could eat it by itself but adding the berries is even better.   • Arrange whole berries on top of cream cheese mixture pressing them lightly into the cream cheese layer.  Since the berries came from my garden they were not all perfect and uniform like the ones you may find in the story but they were so delicious!

  • Make your glaze, which is a combination of mashed strawberries, water, cornstarch and sugar. Stir the glaze over medium heat until it turns shiny and glossy.  Stir constantly so it doesn’t burn.  Allow it to cool until room temperature and pour it over the strawberries.  Chill pie until ready to eat, at least a couple of hours.

All that is left to do is grab a fork and dig it!

This pie is a sure sign it is summer at our house.  When one of my kids saw the photo on Instagram I received a test asking that I had to make it again when they came home to visit!  You won’t find any argument from me!

Strawberry Cream Pie Recipe

Strawberry Cream Pie

Delicious creamy filling, fresh strawberries, and a yummy glaze makes this the perfect strawberry cream pie recipe.

Graham Cracker Crust

  • 1 1/4 cups graham cracker crumbs (this is one package of graham crackers, 8 sheets)
  • 1/4 cup sugar
  • 6 Tbsp. butter (melted)

Pastry Crust

  • 1 1/4 C flour
  • 1/4 C butter
  • 1/4 C shortening
  • pinch of salt
  • ice cold water (add teaspoon by teaspoon until right consistency has formed)

Glaze:

  • 1 C strawberries (mashed)
  • 1 C sugar
  • 3 Tbsp. cornstarch
  • 1/2 C water

Cream Filling

  • 8 oz. cream cheese (softened)
  • 1/2 C sugar
  • 1 tsp. vanilla
  • 1 C heavy cream (whipped)
  • 4 C whole strawberries

Graham Cracker Crust

  1. Combine the above ingredients and press firmly into a 9 inch pie plate. Bake at 375 degrees for 5-8 minutes or until the edges are lightly browned. Cool.

Pastry Crust

  1. Place flour, salt, butter and shortening in bowl.
  2. Use your hands to combine ingredients until small pebbles form
  3. Add cold water a teaspoon at a time until the dough begins to hold together and form a ball.
  4. Do not over handle the dough. Dough should be soft, moist but not wet.
  5. Place ball of dough onto wax paper and flatten. Place another piece of wax paper over the top and roll out the pastry into a circle. If your pie pan is 9 inch make sure your circle is bigger than 9 inches so you have enough for the edging..
  6. Remove the top layer of wax paper and place pastry into pie tin. Remove other piece of wax paper and press pastry into pan. Use your fingers to crimp the edge of the crust.
  7. Freeze for 30 minutes to firm up the pastry. This helps prevent pastry from shrinking during baking.
  8. Prick the bottom of crust to prevent bubbling during baking.
  9. Bake at 400 degrees. For the first 10-12 minutes keep the edges of pie covered with foil and then remove for the last 15 minutes. Bake until golden brown.

Glaze

  1. Crush 1 cup strawberries. Combine 1 cup sugar and cornstarch in small saucepan. Add water and crushed strawberries. Cook and stir over medium heat to boiling, stir constantly until clear and slightly thickened.

Cream Filling

  1. Blend cream cheese and sugar. Stir in vanilla. Fold in whipped cream. Spread evenly in cooled crust. Refrigerate
  2. Place whole strawberries stem side down on top of creamed filling, pressing slightly.
  3. Spoon glaze over the berries. Chill for 3 hours.

Strawberry Pizza Strawberry Pizza is a delicious and fun way to serve those fresh ripe strawberries! We picked our first strawberries from the garden this last week.  There is nothing like a strawberry fresh out of the garden and warmed by the sun! I didn’t have to think long about what to make with the strawberries.  Traditionally, one of our family’s favorite “first strawberries of the season” recipes is Strawberry Pizza,  a sure sign that strawberry season is here. I have been making it for over twenty years without fail.  I never have trouble finding the recipe because it is the dirtiest page in the cookbook, a true sign of a great recipe! I originally shared this recipe back in 2008, not too long after I started this blog.  It is totally worthy of a repeat and new photos.  It is so good.  When Logan saw me post a photo of it on Instagram he quickly asked if I would make it again next weekend when he is home visiting!  My kids love this and so do I. The pizza is made with a tender shortbread or sugar cookie type crust, a layer of cream cheese and then a strawberry glaze and sliced strawberries on top, kind of sounds like our favorite Strawberry Pie  ,  just in a different form!   Guess I have a thing for strawberries and cream cheese. How to Make Strawberry Pizza I use my Kitchen Aid to mix up the crust, it will seem a bit cumbly so just use your hands and form it into a ball.  It will come together nicely. Roll the dough out onto a piece of parchment paper and place on an ungreased cookie sheet.  Sometimes I make it round, sometimes I make it into a rectangular.  Depends on my mood. Bake for about 12-15 minutes at 325 degrees F or until lightly golden brown. While it is baking and cooling mix up your cream cheese mixture and your strawberry mixture.  Spread the cream cheese mixture on the cooled cookie crust. Use a food process to smash your strawberries or do it by hand.  I like to use the food processor because the sauce doesn’t end up as chunky.   Cook the strawberry mixture until it thickens and becomes glossy.  It will look cloudy at first but will become more glossy as it thickens.  It will take about 5 minutes or so and then cool the mixture. Be sure and stir constantly so it doesn’t burn. Spread the cooled mixture over the cream cheese mixture. The last step is to add the sliced strawberries.  Use a pizza cutter to slice up your strawberry pizza and enjoy! Strawberry Salsa Strawberry Salsa is the perfect combo of sweet and savory.  It’s delicious as a dip with chips or served over grilled meats or tacos. Strawberry season has begun here in the Pacific NW and I couldn’t be happier. On our recent Scandinavian Cruise I ate a lot of strawberries, Norwegian strawberries are amazing.  I was looking forward to getting home to my little strawberry patch.  We discovered lots of ripe strawberries when we arrived home and our strawberry patch has been producing better than it ever has so I’ve been cooking up lots of new strawberry recipes.  I’ve got lots of sweet strawberry recipes so I wanted something a little bit more savory. How to Make Strawberry Salsa Strawberry Salsa is the perfect combination of sweet and savory.  The natural sweetness of the strawberries  paired with some red onion, jalapeno pepper and cilantro is perfect.  Add in some white balsamic vinegar for even more flavor.  I like using the white balsamic vinegar because it keeps the strawberries bright and red.  White balsamic vinegar should be available at your local grocery store, but if you can’t find it, use regular balsamic vinegar.  It will make the strawberry salsa a little darker, but gives you the same great flavor. Just add all the ingredients together and pour the balsamic vinegar over the top and stir.  If your strawberries aren’t as sweet as you would like add in a teaspoon or two of sugar.  If you have time to refrigerate the strawberry salsa the strawberries will sweeten up as they sit. What to Serve with Strawberry Salsa My favorite thing to serve strawberry salsa with is tortilla chips but you can use any kind of chip or cracker. Pour it over some cream cheese and serve with crackers. Use it as a relish over baked chicken or steak. Serve it over ice cream. Put a spoonful on a turkey sandwich. Serve it on tacos. How to Make Strawberry Salsa
