Pear Pecan Snack Cake with Cinnamon Drizzle Enjoy a delicious taste of fall with this Pear Pecan Snack Cake with Cinnamon Drizzle. I am excited to be a Bake a Little Extra Blog Ambassador and the following blog post is sponsored by Karo® Syrup. I love to bake and when I can , I try to bake a little extra to share with my friends and neighbors. In fact, I shared today’s recipe for this yummy Pear Pecan Snack Cake at a neighborhood party this past weekend and it was a big hit. Folks kept coming back to sneak a piece and the neighborhood kids were kind enough to keep asking if it was okay to have seconds. Nothing says, “that was delicious” quite as well as an empty plate. Packed with juicy pears and yummy fall flavors like pecans and cinnamon, it’s not hard to see why it went quick. This recipe was adapted from a Karo® recipe for Apple Snack Cake. Although it’s called a snack cake, it’s just not for snacking. It would be great as a breakfast treat or as the main dessert after dinner. Here’s how I put it together: I started by combining the dry ingredients and setting them aside. Then I mixed together the wet ingredients which include buttermilk, eggs, Karo® Light Corn Syrup , oil and vanilla. The sweetness and texture of the syrup helps create a moist and delicious cake. Karo Syrup is pretty much a staple in my pantry, especially during the holiday baking season. Next, you fold in the pears and the nuts into the batter and pour into a greased 8 x 8 pan. Bake at 350 degrees F and then allow it to cool. After it has cooled, drizzle it with the cinnamon glaze for extra goodness. Then of course all that is left to do is to enjoy it with friends. Pear Pecan Snack Cake with Cinnamon Drizzle Print Prep time 15 mins Cook time 35 mins Total time 50 mins Author: LeighAnne Wilkes Recipe type: Dessert Serves: 12 Ingredients 1 cup all-purpose flour ¼ cup Argo® Corn Starch ½ teaspoon Argo® Baking Powder ½ teaspoon baking soda ½ teaspoon salt ½ teaspoon Spice Islands® Ground Saigon Cinnamon ⅔ cup sugar ⅓ cup buttermilk 1 egg 1 egg white ¼ cup Karo® Light Corn Syrup 3 tablespoons Mazola® Corn Oil 1 teaspoon Spice Islands® Pure Vanilla Extract 2 cups chopped peeled pears ½ cup chopped pecans GLAZE: (optional) ⅓ cup powdered sugar 1 to 2 teaspoons milk ½ tsp cinnamon Instructions Preheat oven to 350°F. Combine flour, corn starch, baking powder, baking soda, salt and cinnamon in a small bowl. Set aside. Whisk sugar, buttermilk, egg, egg white, corn syrup, oil and vanilla in a large bowl. Gradually stir in flour mixture until smooth. Fold in apples. Pour into a greased 8-inch square baking pan. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Pumpkin Pie Cake Instead of pumpkin pie, try a pumpkin pie cake this year. All the flavor and goodness of pie but so much easier in cake form! I have to admit, I have not always been a fan of pumpkin pie but as I have gotten older and wiser I have come to understand the beauty of pumpkin pie and pumpkin in general. But I have to confess, I have never made a pumpkin pie. I have made pumpkin cheesecake, pumpkin bars, pumpkin cookies, pumpkin chili, pumpkin soup, pumpkin waffles and a few other pumpkins recipes. Just search pumpkin on the blog for more! But, amongst all those pumpkin recipes, you will not find a pumpkin pie recipe. The closest I’ve come is a pumpkin pie milkshake! True confession, I buy our pumpkin pie. Usually it comes from Costco. But this year, instead of buying a pumpkin pie, we’re having pumpkin pie cake! I’m all for helping make holiday cooking easier and pumpkin pie cake is one way to do it. You get all the same flavor and texture of pumpkin pie with a lot less work. There is no pie crust required. The cake is also super easy because it uses a cake mix. Part of the cake mix is added into the pumpkin mixture and the rest is saved to sprinkle over the top which creates a yummy topping to the cake. Before you bake it give it a nice bath in butter!Just like pumpkin pie, pumpkin pie cake is better when topped with whipped cream. And even better when you drizzle it with some caramel sauce. You can use store bought or this homemade caramel sauce recipe is the best! Then you know the drill, all that is left to do is add a fork! Pumpkin Pie Cake Print Prep time 15 mins Cook time 1 hour Total time 1 hour 15 mins Author: LeighAnne Wilkes Serves: 12 Ingredients 4 large eggs 1½ cups white sugar 2 tsps ground cinnamon 1 tsp salt 1 tsp ground ginger ½ tsp ground cloves 1 (29 oz) can pumpkin puree (not pumpkin pie filling) 2 (12 oz.) cans evaporated milk 1 (15.25 oz) package yellow cake mix, divided ½ C butter, melted whipped cream caramel sauce Instructions Preheat oven to 350 degrees F. Beat eggs in a bowl Whisk together sugar, cinnamon, salt, ginger and cloves in another bowl. Add sugar mixture and pumpkin into eggs. Mix until incorporated. Gradually add in evaporated milk into pumpkin mixture. Add in 1 C of cake mix to pumpkin mixture and stir to remove lumps. Pour into a greased 9 x 13 pan. Sprinkle remaining cake mix over the top and then drizzle butter over the top Bake for 1 hour or until set. Cool and then cut into bars. Halloween Monster Caramel Apples These Halloween Monster Caramel Apples are fun to make and too much fun to eat! This post contains affiliate links. Last week at our women’s church craft night I did a caramel apple dipping demonstration. You can find all my top tips in a post I did a few years ago. I had some leftover apples and caramel so I decided to make some fun Halloween Monster Caramel Apples for a few of my favorite little goblins! I had made my once a season stop at Krispy Kreme to get my pumpkin spice old fashioned donut and noticed the cute Halloween monster donuts they had. I decided they would make cute Caramel Apples too. So using my best caramel apple dipping tips I made some cute Halloween Monsters! I used Granny Smith apples and my favorite Peter’s Caramel. It is the best!! I have found the best way to melt it is in the slow cooker. In addition to apples and caramels you will want some sticks. These are the kind I like the best because they are nice and sturdy and will hold the apple up. For photographic purposes I used some fun Halloween straws I have but they aren’t strong enough for dipping the apples in the caramel and chocolate. I used the sticks to dip and then removed them and put in the straws for the picture. For the colored candy coating I used Wilton Melts which I love! I keep a stash of all the colors on hand. For the facial expressions I used royal icing, it sets up nice and hard. You can buy meringue powder and just add water to it or you can make your own from scratch using this recipe. It’s easy! For the eyes I purchased Googly Eyes because I was a bit short on time but you can totally make your own using the royal icing. I show you how to make your own edible googly eyes here.
