One of my favorites is the white cheddar cheese! The trick to a good cheese board is a good selection of cheeses! Be sure and check the deli section of the store for even more variety of cheeses. A little drizzle of something sweet over the cheese is an amazing combo. If you haven’t tried it, you must. Honey and jam are both good choices! A blackberry or raspberry jam is my favorite. Peanut Butter Pie This Peanut Butter Pie is light and fluffy and full of peanut butter goodness. I didn’t win but my dish came home empty so I call that a winner. This last week we had a Christmas dinner at church and I was asked to bring a dessert so I decided this pie worked for a church dinner before, it would work again! The pie dish came home empty once again! Original post: At church this weekend we had a party. Everyone was to bring a homemade pie or homemade soup. There was going to be judging and prizes awarded! I decided to take a pie. My competitive edge went into high gear and I began searching through pie recipes. I decided not to do pumpkin or apple because I figured that everyone would do either pumpkin or apple given the time of year. A few weeks ago on my Beach Babe escape weekend we had enjoyed an amazing piece of peanut butter pie and it had been on my mind ever since. In my recipe search I came across a recipe for peanut butter pie I have had in my files for years. It had been ten years or more since I made it but I remembered it being pretty good so I decided that it would be my pie contest entry. The original recipe called for a graham cracker crust but since I can’t eat peanut butter without chocolate I made my crust out of chocolate cookies. (you can use Oreos too) All I had in the cupboard was natural peanut butter so I added a little bit of salt – about 1/4 tsp. and a little bit of sugar (just to taste) to sweeten it up a bit. If you using regular peanut butter you will not need to do that. The filling is a combination of peanut butter, cream cheese, powdered sugar and whipped cream and makes a nice light and fluffy filling – yum! I added extra whip cream on top and some broken up Reese’s Peanut Butter Cups for an extra peanut butter punch and besides that it looked prettier. Now wouldn’t you pick this pie as a winner? Well, the judges didn’t -so sad! An apple pie was the winner! I think this recipe is a real winner though. So next time you get a craving for peanut butter and chocolate give this a try! - 1 tsp vanilla
- 1 1/2 C heavy cream

- Bake a 425 degrees for 9 – 10 minutes
- Let cool

Easy Apple Pie This easy apple pie is delicious but the best part is there is no pastry crust and it’s easy! Today’s recipe is my favorite apple pie. If you follow me on Instagram you may have seen my IG story where I was preparing this yummy pie! Not only is it yummy but if you are not a pie maker and the thought of making a pie crust scares you – this is the recipe for you! No rolled pie crust – you don’t even need one of those store bought ones either. This version of apple pie is similiar to a French Apple pie with a yummy crumb topping. But not only do you use the crumb topping on top – you also use it for the bottom crust. Yum! Oh and did I mentioned this crumb topping is FULL of butter and sugar – yum, yum!! My friend Kim Shaw shared this recipe with me years ago and it is my favorite apple pie to make. It is especially great during the holidays when you’ve got lots of other goodies to make too. I use a potato peeler to peel my apples and then my favorite apple corer. I slice the apples to be about 1/4″ thick. I like to use granny smith or honey crisp apples for my apple pie. Of course this pie is perfect served ala mode! Galaxy Cake – Olive’s First Birthday! We celebrated our daughter Olive’s first birthday last weekend, and I decided to go all out for her cake! Candy Cookie Pie Have leftover Halloween candy? This Candy Cookie Pie is the perfect solution? This post contains affiliate links. Now that Halloween is over and done you may still have some candy hanging around. Since I don’t have any trick or treaters at my house anymore, I always hope for a little leftover candy after the trick or treaters have come. I also tend to over buy on the Halloween candy so I make sure I have leftovers! I also hate the idea of running out of candy and having to turn trick or treaters away! When my kids were at home I had one child who liked to go trick or treating but didn’t really like candy so there was always lots of leftover Halloween candy. How did I raise a child you doesn’t like candy!?!? Today’s recipe for Candy Cookie Pie is the perfect solution to that leftover candy! This pie is so good that you are going to want to make it even if you don’t have leftover candy, you’ll go out and buy some just to make it!! It is simple to make too. All you need is a store bought graham cracker crust, store bought sugar cookie dough and candy! You can use whatever combination of candy you like. I used my favorites, Twix, Peanut Butter M & M’s and Rolos. The pie goes together super easy too. You can have the kids do it! Gently press your cookie dough into the pie crust (it may crack the edges of the pie crust a bit) Then press your candy into the cookie dough. Bake at 350 degrees F or until the cookie is golden brown and the center is firm. Then slice yourself off a nice big piece, top it with some ice cream and chocolate sauce and you’ll be in heaven! The only other thing you will need is a fork!
