Fresh Strawberry Ice Cream It’s summer and that means ice cream. Nothing better than a batch of fresh strawberry ice cream on a warm summer day. You may have noticed a bit of a strawberry theme on the blog lately! We’ve had a record strawberry crop this year and I’ve gone a little strawberry crazy. I’ve even had enough strawberries to freeze some for later. You can check out my tips for freezing strawberries here. We’ve been enjoying all our strawberry favorites including Strawberry Pizza, an old family favorite and Strawberry Sour Cream Cake which is becoming a new family favorite. Today’s recipe is also another old family favorite and it is one that my mother use to make. This recipe for strawberry ice cream came from an old family friend and is amazing. Nothing says summer better than a batch of homemade ice cream – especially when it is full of strawberries. How to Make Strawberry Ice Cream Prepare your strawberries. Wash and hull your strawberries first. I love using this little tool to quickly hull my strawberries. Then you can mash your strawberries with a potato masher if you like larger chunks of strawberry in your ice cream or you can pulse them in your food processor if you don’t want chunks. I usually pulse the berries once or twice in the food processor so they are somewhere in the middle. I like little pieces of strawberry but not big ones in my ice ream. Combine your ingredients. Add your berries with your milk and sugar. The recipe uses a combination of whole milk and whipping cream. Pour your mixture into your ice cream maker and churn according to manufacturers directions. This recipe is also delicious made with other kinds of berries such as raspberries, blackberries, marionberries, blueberries and a combination of berries would be great too! After the ice cream is done churning I put it into my favorite ice cream storage container and let it harden up in the freezer for several hours before serving. Can I Use Frozen Berries Instead of Fresh? The fresher the strawberries the better of course but this ice cream is also delicious with frozen berries but when you can use fresh please do! What Ice Cream Maker Do You Use? I use a 2 qt. Cuisinart counter top ice cream maker. How to Macerate Strawberries Learning how to macerate strawberries is easy and the perfect way to sweeten berries that aren’t as sweet as you’d like. Nothing is worse then buying a container of beautiful red strawberries at the store, getting home and discovering that they look better than they taste. When this happens to me I like to macerate the strawberries. What does Macerated Mean? Macerated means to soften or sweeten by soaking in a liquid. It is the perfect way to sweeten strawberries that aren’t as sweet or ripe as you would like them. Fruit can be macerated in a liquid such as balsamic vinegar or liquor but it can also be macerated in sugar. The sugar pulls out the juices of the fruit forming a syrup and turns a tasteless berry into a sweet one. How to Macerate Strawberries Place your clean, hulled, sliced fruit into a bowl and sprinkle with sugar. Use 2 Tbsp of sugar per cup of fruit. The amount of sugar can vary depending on how ripe your fruit is and how sweet you want your fruit. Stir in the sugar and then cover the bowl with plastic wrap and place in the refrigerator. How Long Should I Macerate Fruit? The macerating process will start right away and you will see the syrup begin to form. Strawberry Rhubarb Pie This delicious strawberry rhubarb pie is the perfect combination of sweet strawberries and tart rhubarb. A flaky pastry crust and a crunchy streusel top make this the perfect pie. I have to admit, this is the first time I have ever cooked or baked with rhubarb. My husband grew up eating rhubarb, they would pick it from the sides of the road in Idaho. He is a big fan of a strawberry rhubarb pie, but I had never made one for him. My friend Marsha usually makes one every year and she always shares a piece with Jim so I figured I was good. Well, this year I decided I needed to overcome my fear of rhubarb. Truth be told, we had so many strawberries in our garden this year I was searching for new strawberry recipes to try and decided a strawberry rhubarb pie was the perfect thing to make! How to Make Strawberry Rhubarb Pie Start with a good, flaky pastry crust. I always use my Perfect Pie Crust recipe. There is also a video tutorial with the recipe if you have never made a pastry crust before. Use a 9″ pie plate. Use a thickener. Rhubarb is watery so by adding a few tablespoons of tapioca to the bottom of the crust before filling it with the strawberry rhubarb mixture helps thicken the pie as it bakes. Strawberry Rhubarb Pie Filling Prepare your fruit – I like to dice my strawberries and rhubarb up fairly small, into bite size pieces. Fill your pie – Mix together your sugar, lemon juice, nutmeg, cornstarch and water with your fruit and fill your pie. Allow this to stand at room temperature for about 30 minutes to allow the flavors to come together. Make streusel topping – this is a combination of flour, brown sugar, oatmeal and butter. Combine until crumbly and then sprinkle over the top of the fruit in the pie crust. The pie will bake at 375 F for 50-55 minutes or until streusel topping is nice and golden brown and pie filling is hot and bubbly. If your pie crust edges starts to get too brown, cover the edges of the pie crust with a tent of aluminum foil. Allow the strawberry rhubarb pie to cool, it will continue to set up and thicken as it cools. If you can’t wait to dig in you just might want to use a spoon instead of a fork. Of course it must be served with a scoop of ice cream.
