Sometimes I think limes get overlooked.  It’s always all about the lemons and I’ll be the first to admit I love all things lemon, which is very evident by the number of lemon recipes on this blog!  But I think the poor neglected little lime deserves a little more attention and I’m determined to give it to it. Key limes originate in the Florida Keys and they are a smaller lime with more seeds, more aroma and a little more unique flavor than the regular grocery store lime.  Key lime juice is the star of Key Lime Pie  and I highly recommend making the effort to find and use key lime juice.  Here in the Pacific Northwest I can sometimes find key limes in my grocery store, sometimes not, but I can always find key lime juice (same aisle as the apple juice etc.)  I like the Nellie & Joes Key Lime Juice and to be perfectly honest, I prefer using the bottled juice because it is easier.  Those key limes are little and you have to squeeze a lot to get enough juice!  I also haven’t noticed a huge difference in flavor from the fresh ones but maybe my key lime juice palate isn’t too sophisticated. So if you cheat like me and use the bottled juice, just don’t cheat on the glaze.  It is the crowning glory of this bread.  Don’t leave it off and don’t be stingy with it!  You’ll be sorry if you do.   • 1/3 cup butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 1 Tbsp lime zest (grated)
  • 1 Tbsp Key lime juice
  • 1 tsp vanilla
  • 1 1/2 cups flour, (all purpose)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup buttermillk

Glaze

  • 3/4 cup powdered sugar
  • 1-2 Tbsp Key lime juice
  1. Preheat oven to 350 degrees F.  

  2. In a bowl cream butter and sugar until light and fluffy.

  3. Add in eggs, lime zest, juice, and vanilla.  Mix until combined.

  4. In another bowl, mix together flour, baking powder and salt.

  5. Alternately, add in flour and buttermilk.  Mix well.

Baked Brie with Fruit Baked Brie with fruit can really put on a show, not only is it pretty but it’s delicious too.  The best part though is how easy it all comes together. Baked brie with fruit is pretty much my favorite appetizer of all time. It’s guaranteed to get you lots of oohs and aahs at your next party too.  The soft, oozing cheese topped with delicious fresh fruit is just too hard to resist and will be the first thing to disappear at  your party. I love it because you can serve baked brie with fruit all year round and just change up your fruit depending on what is in season.  This time of year I love to serve it with fresh peaches and blackberries.  In the winter I use apples and pears.  No matter what fruit I use though I love to top it all off with toasted walnuts. In fact, sometimes I serve brie with just some brown sugar and walnuts on top, no fruit. Another reason this is the perfect thing for your next party is how easy it is.  You can make up the fruit mixture ahead of time and then about 15 minutes before you are ready to serve, just pop the brie into the oven on a baking sheet until the cheese gets nice and hot and soft.  Top it with your warmed up fruit mixture, sprinkle with your toasted walnuts and start dipping!  If the brie cools off before your guests have finished it off, just pop it back in the oven for a few minutes to remelt it. I toast my walnuts in my microwave.  Just put them on a plate and cook on high for about 2 minutes, stir and repeat until they start turning brown.  The toasting gives the walnuts amazing flavor. You can also toast them in the oven if you prefer or in a pan on the stove top.  Just watch them closely because they can go from perfect toasted to burned really quickly. Nutella Marshmallow Popcorn Nutella Marshmallow Popcorn is the perfect combination of sweetness and gooeyness.  Bet you can’t stop eating it! Several years ago I posted a recipe for Marshmallow Popcorn.  I recently made a video of it and it’s gone a little crazy over on Facebook.    Marshmallow Popcorn is easy to make and so delicious so I decided to take it to the next level. Your movie nights are never going to be the same!  We are big popcorn eaters at our house and popcorn has even been known to work as dinner more than a few times (at least for me).  It’s corn so it’s a vegetable, right?! For this dressed up version of Marshmallow Popcorn, you can use microwave popcorn if you’d like (3 bags full) but I like to use this handy dandy little microwave popcorn popper and pop my own.  You don’t get all the salt that way!    Check it out here.  I used 24 cups of popcorn which was about 3 batches in my little microwave popcorn popper.  Put your popcorn in a large bowl and then melt your marshmallows, butter and brown sugar in the microwave.  Stir in your Nutella and you are almost there. After the Nutella is mixed in with the marshmallow mixture and nice and smooth, pour it all over the popcorn. Stir until all the popcorn is covered with Nutella marshmallow goodness and then spread the popcorn out on a large baking sheet. Let the popcorn set up a bit.  It will be nice and gooey even after it sets up.  I of course can never wait for it to set up so I always dig right in.  The gooier the better as far as I’m concerned!! Several years ago I posted a recipe for Marshmallow Popcorn.  I recently made a video of it and it’s gone a little crazy over on Facebook.    Marshmallow Popcorn is easy to make and so delicious so I decided to take it to the next level.

Nutella Marshmallow PopcornYour movie nights are never going to be the same!  We are big popcorn eaters at our house and popcorn has even been known to work as dinner more than a few times (at least for me).  It’s corn so it’s a vegetable, right?!

For this dressed up version of Marshmallow Popcorn, you can use microwave popcorn if you’d like (3 bags full) but I like to use this handy dandy little microwave popcorn popper and pop my own.  You don’t get all the salt that way!    Check it out here.  I used 24 cups of popcorn which was about 3 batches in my little microwave popcorn popper.  Put your popcorn in a large bowl and then melt your marshmallows, butter and brown sugar in the microwave.  Stir in your Nutella and you are almost there.

Pimento Cheese Dip  andPimento Cheese Dip is affectionately called the caviar of the south.  A combination of cheese, mayonnaise and pimento is delicious on a cracker or bread. I recently discovered Pimento Cheese Dip.  Where has it been all my life?  I guess I haven’t spent enough time in the South as it is a common dish there and often called the pate of the South.  Pimento Cheese Sandwiches are a signature dish at the Masters Golf Tournament too.  I guess I’ve been missing out! I discovered it for the first time here in Portland, Oregon at a local BBQ restaurant.  I had no idea what it was when I saw it on the menu but I was feeling adventurous and wanted to try something new so I ordered it.  When it arrived, everyone at the table asked what it was as they had never seen it or heard of it before.  They may not have heard of it before, but once they tried it, it quickly disappeared. It was served with crackers but is often served with bread too and as a spread on a sandwich.  You can even put it on a hamburger!  It is a combination of SHARP Cheddar Cheese (you must use sharp), mayo, pimento  and usually something hot such as hot sauce, jalapeno or cayenne pepper.  For my version I left the heat out but feel free to add some in if you prefer. I recently took it to a party and had lots of comments.  Most people, asking what it was, but there were a few who were familiar with Pimento Cheese Dip and were excited to see it.  Everyone loved it. I had been craving it ever since we had it at the restaurant so I ate my fair share of it!  It is going to be my go to party dip from now on. Some of  my other favorite party dips are: Roasted Garlic Artichoke Dip Copycat Chipotle Guacamole Chili Con Queso Dip Pimento Cheese Dip Pimento Cheese Dip is affectionately called the caviar of the south.  A combination of cheese, mayonnaise and pimento is delicious on a cracker or bread. 2 cups Sharp Cheddar Cheese (grated) 8 oz cream cheese (softened) 1/2 cup mayonnaise 1/2 tsp garlic powder 1/4 tsp onion powder 4 oz jarred pimento (drained) salt and pepper to taste 1/4 – 1/2 tsp ground cayenne (optional) 1/2 tsp dry mustard Mix all the ingredients together in a bowl and mix to combine. It was served with crackers but is often served with bread too and as a spread on a sandwich.  You can even put it on a hamburger!  It is a combination of SHARP Cheddar Cheese (you must use sharp), mayo, pimento  and usually something hot such as hot sauce, jalapeno or cayenne pepper.  For my version I left the heat out but feel free to add some in if you prefer.

Pimento Cheese Dip

I recently took it to a party and had lots of comments.  Most people, asking what it was, but there were a few who were familiar with Pimento Cheese Dip and were excited to see it.  Everyone loved it. I had been craving it ever since we had it at the restaurant so I ate my fair share of it!  It is going to be my go to party dip from now on.

Pimento Cheese Dip is affectionately called the caviar of the south.  A combination of cheese, mayonnaise and pimento is delicious on a cracker or bread.

  • 2 cups Sharp Cheddar Cheese (grated)
  • 8 oz cream cheese (softened)
  • 1/2 cup mayonnaise
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 4 oz jarred pimento (drained)
  • salt and pepper to taste
  • 1/4 – 1/2 tsp ground cayenne (optional)
  • 1/2 tsp dry mustard
  1. Mix all the ingredients together in a bowl and mix to combine.

  2. Salt and pepper to taste

  3. Serve with crackers or on bread.

Peanut Butter Sheet Cake Peanut Butter Sheet Cake is perfect for your summer cookbooks, BBQ’s and potlucks. Summer is still going strong and so is this peanut butter sheet cake. Sheet cakes are the perfect summer dessert.  They are easy to make, taste great and feed a crowd.  Summer is heating up here in the Pacific NW and we’ve had record breaking temperatures. Summer arrives late here but when it does, it arrives! Nothing beats a good sheetcake for a summer cookout or potluck.  Texas Sheet Cake is a classic for summer BBQ’s and I love my Almond Sheet Cake too.  Today’s recipe for Peanut Butter Sheet Cake is another one to add to the sheet cake repertoire.  It really rounds out the flavor selection. I served this recently at a neighborhood get together and the first question asked was , “Is the recipe on the blog?”  When I told them it wasn’t yet, the reply was, “it better be soon!”  I think they liked it! I use my big 10 x 15″ jelly roll pan.  Everyone needs at least one of these in their kitchen.  I have four!  The recipe calls for buttermilk which I prefer  but if you don’t have any, regular milk will do or make your own by adding some vinegar to the milk.  Use 1 Tbsp vinegar to 1 cup milk to make your own buttermilk. Always frost a sheet cake warm.  The frosting soaks into the cake a bit which is so yummy. I don’t know about you, but I can’t seem to eat peanut butter without chocolate so I added a chocolate drizzle to the top of the cake.  I just melted some chocolate chips but you could also use some fudge sauce if you have it hanging around!  Non-chocolate lovers (is there such a thing?), can leave it off  and add some crushed peanuts for  nice touch to the top too with or without the chocolate drizzle.  Or go all out and add both the chocolate drizzle and the crushed peanuts. Peanut Butter Sheet Cake Peanut Butter Sheet Cake is perfect for your summer cookbooks, BBQ’s and potlucks. Summer is still going strong and so is this peanut butter sheet cake. 2 cups all purpose flour 1 cup granulated sugar 1 cup brown sugar (packed) 1 tsp baking soda 1/4 tsp salt 1 cup butter (softened) 3/4 cup peanut butter (creamy) 2 eggs 1/2 cup buttermilk 1 tsp vanilla Frosting 1/2 cup butter 1/2 cup peanut butter 6 Tbsp milk 1 tsp vanilla 3 3/4 cups powdered sugar Chocolate Drizzle 3/4 cup chocolate chips (semi sweet) 3 Tbsp butter 1 Tbsp corn syrup 1/2 tsp vanilla 1/2 cup peanuts ( crushed, optional) Sheet Cake Preheat oven to 350 degrees F.  Grease jelly roll pan In a bowl, mix together flour, sugars, baking soda and salt. In a saucepan, combine water, 1 cup butter and bring to a boil.  Add in peanut butter and mix until blended. Stir in dry ingredients.  Add in eggs, buttermilk and vanilla.  Stir until the peanut butter mixture is well blended. Spread into greased pan and bake for 18-25 minutes or until a toothpick comes out clean. Frosting While the cake is baking,  bring butter, peanut butter and milk to a boil. Add in sugar and vanilla.  Mix well. Frost cake while warm.  Spread frosting in an even layer.  Drizzle with chocolate or sprinkle with crushed peanuts.
