I recently discovered Pimento Cheese Dip. Where has it been all my life? I guess I haven’t spent enough time in the South as it is a common dish there and often called the pate of the South. Pimento Cheese Sandwiches are a signature dish at the Masters Golf Tournament too. I guess I’ve been missing out!
I discovered it for the first time here in Portland, Oregon at a local BBQ restaurant. I had no idea what it was when I saw it on the menu but I was feeling adventurous and wanted to try something new so I ordered it. When it arrived, everyone at the table asked what it was as they had never seen it or heard of it before. They may not have heard of it before, but once they tried it, it quickly disappeared.
It was served with crackers but is often served with bread too and as a spread on a sandwich. You can even put it on a hamburger! It is a combination of SHARP Cheddar Cheese (you must use sharp), mayo, pimento and usually something hot such as hot sauce, jalapeno or cayenne pepper. For my version I left the heat out but feel free to add some in if you prefer.
I recently took it to a party and had lots of comments. Most people, asking what it was, but there were a few who were familiar with Pimento Cheese Dip and were excited to see it. Everyone loved it. I had been craving it ever since we had it at the restaurant so I ate my fair share of it! It is going to be my go to party dip from now on.

- 2 cups Sharp Cheddar Cheese (grated)
- 8 oz cream cheese (softened)
- 1/2 cup mayonnaise
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 4 oz jarred pimento (drained)
- salt and pepper to taste
- 1/4 – 1/2 tsp ground cayenne (optional)
- 1/2 tsp dry mustard

Mix all the ingredients together in a bowl and mix to combine.

Salt and pepper to taste

Serve with crackers or on bread.
