Toasted Marshmallow Ice Cream has all the goodness of a toasted marshmallow ready for a s’mores but in ice cream form. No campfire required!!
To me the flavor of summer is always toasted marshmallow or s’mores. The flavor of spring may be lemon, the flavor of fall pumpkin spice and the flavor of winter maybe is always peppermint but summer is toasted marshmallow. Whether that toasted marshmallow is in the middle of a s’mores or in the form of ice cream, it’s one of my favorites.
I find it next to impossible to pass up a perfectly roasted, golden brown, oozing with goodness marshmallow. When we were down at the beach over the 4th of July we roasted plenty of marshmallows. One day we went into a little gourmet ice cream shop in the neighboring town of Wheeler and much to my delight they had a toasted marshmallow ice cream.
Of course I had to try it, I loved it and knew I had to come home and recreate it. The result is today’s recipe for Toasted Marshmallow Ice Cream.
I used my go to, can’t be beat vanilla ice cream recipe. It is my starting point for so many of my ice cream recipes. If you haven’ tried it, you must. There are no eggs in it and it requires no cooking! All I did was add some perfectly toasted marshmallows! To toast them I just placed them on a parchment lined cookie sheet and popped them under the broiler. After they are perfectly golden brown put them in a high speed blender along with some of the ice cream base and blend.
I used about a dozen large toasted marshmallows. Just add the mixture to your ice cream maker and follow the manufacturers instruction. Toast a few extra marshmallows to use as a garnish on top. Some hot fudge sauce and crushed up graham cracker sprinkled on top and you’ll thinking you’re eating a s’mores!

Toasted Marshmallow Ice Cream
Toasted Marshmallow Ice Cream has all the goodness of a toasted marshmallow ready for a s’mores but in ice cream form. No campfire required!!
- 1 1/2 cups whole milk
- 1 1/2 cups sugar
- 1/4 tsp salt
- 1 1/2 cups half and half
- 2 cups whipping cream
- 1 Tbsp vanilla
- 12 large marshmallows

Place marshmallows on a parchment lined baking pan and place under broiler until golden brown.

Mix together remaining ingredients. Place 2-3 cups of mixture into a high speed blender.

Add marshmallows into blender and pulse to blend. Add in remaining milk mixture.

Pour into ice cream maker and mix according to instructions.
