Classic Pecan Pie One of my favorite parts of this Bake Craft Sew series, in addition to lots of fabulous recipes, is the opportunity I have to introduce you to some amazing bloggers you might not now. This Classic Pecan Pie is perfect for any holiday dinner, party or get-together, and when topped with a delicious Vanilla Bean Whipped Cream, this dessert will make your holiday complete! My husband absolutely adores pecan pie. Every year when Thanksgiving and Christmas roll around, I always ask what pie he would like, and his answer is ALWAYS pecan! In fact, instead of a birthday cake, Jason has asked for pecan pie, instead – that’s how much he loves this rich, classic dessert! Over the years, I’ve come to perfect this holiday treat, as I’ve made it more times than I can count. The recipe is simple, as it uses a basic pie crust – I use a refrigerated, store-bought pie crust. It make things simple and fool-proof, and is a huge-time saver. No need to worry about making, refrigerating and rolling out the dough – simply unroll the pre-made crust, press it into the bottom of the pie plate, and crimp the edges. From here, your pie is ready for its filling. The filling for this delicious pie is rich, sweet and decadent. The pecans are the centerpiece of this dessert and add the most wonderful texture in every bite. If you wish, add the pecan halves in a spiral design making for a very beautiful appearance. If doing this, add the pecans on top of the filling, versus pouring the filling over the top of the pecans placed into the bottom of the crust. Any way you have it, the pie will bake to a beautiful auburn brown. This rich, decadent pie is great on its own, but even better with my Vanilla Bean Whipped Cream! Much like a standard whipped cream, this fantastic pie topping has the addition of vanilla bean caviar. It’s subtle vanilla flavor compliments the pie wonderfully! Classic Pecan Pie with Vanilla Bean Whipped Cream {DRAFT ONLY} Print Prep time 10 mins Cook time 45 mins Total time 55 mins Classic flavors in the ultimate holiday dessert! Author: Erin Indahl-Fink Recipe type: Dessert Cuisine: American Serves: 8 servings Ingredients 1, 9" pie crust (refrigerated) 1½ c. pecan halves 4 eggs ¾ c. sugar 1½ c. dark corn syrup ½ tsp. salt 1½ tsp. vanilla ½ c. melted butter Instructions Preheat oven to 375 degrees. In a 9" pie pan, add the refrigerated pie crust. Press into sides, and crimp top edges. Place the pecan halves in the bottom of the crust. Set aside. Combine the eggs, sugar, syrup, salt, vanilla and melted butter. Whisk together until completely combined and smooth. Pour over the pecans into the pie crust.
