Peppermint Bark Dip Peppermint Bark Dip is the perfect guest to invite to your upcoming holiday party! We’ve had 7 holiday events in the last ten days!  I love all the fun that comes with the holidays.  And with those holiday parties comes all the holiday food. Peppermint is definitely the flavor of the season and if you are looking for a delicious, sweet and pepperminty treat to take to your next holiday event, you’ve found it. Peppermint Bark is one of my favorite things about this time of year and every year it becomes a contest for me to see how many different peppermint bark flavored treats I can find. I am particularly found of the limited edition Peppermint Bark Haagan Daz ice cream that comes out this time of year. It’s the ice cream I buy and then hid in the back of the freezer so I don’t have to share.  Those white chocolate peppermint M & M’s are also at the top of my list. For one of our parties I was asked to bring an appetizer.  Appetizers don’t always have to be savory, in fact one of my favorite dips that I’ve shared here on the blog is the chocolate chip cookie dip!  That stuff is addictive and so is this peppermint bark version. I used a combo of cream cheese, marshmallow fluff, and Cool Whip.  For the peppermint part, you can either crush up some candy canes or if you are lucky enough to find crushed peppermint candy in the bulk section of your grocery store,  you’ll save some time. If you want a lot of peppermint flavor you can also add in a little peppermint extract but I found that the candy cane worked just great so I used a bit of vanilla extract. For the dipping part, I like to use the mini vanilla wafers or for a bit more chocolate, try the mini Oreo cookies.  Of course, a spoon would work just fine too. Chicken and Sweet Potato Waffle Sliders and $200.00 Giveaway Waffles aren’t just for breakfast anymore!  These Chicken and Sweet Potato Waffle Sliders are sure to be a big hit at your next game day party or anytime! Rosemary & Thyme Candied Walnuts These Rosemary & Thyme Candied Walnuts could be called a triple threat – they are savory, sweet and have a little heat! This post is sponsored by the California Walnut Board but all opinions are my own. Besides being a triple threat, these walnuts are addictive.  I pretty much couldn’t stop eating them and may have eaten more than my share. They  make a perfect holiday gift.  The only problem is you better make twice as many as you think you need because you may eat more than your share too.  Have you been checking out all the other great holiday gift ideas being shared as part of Bake Craft Sew? I love all the flavors going on with these nuts and they are perfect for just snacking but would be delicious on a salad, in a dip or on top of a salad.  And did I mention snacking?! The savory flavor comes from the fresh rosemary and fresh thyme.  The sweet comes from honey and the heat comes from a little cayenne pepper.  If you don’t want the heat,  just leave out the cayenne. After they are coated with the mixture lay them out on a parchment lined baking sheet and bake for about 10- 12 minutes.  Your house is going to smell yummy too. After you pull them out, stir them around a few times to get them covered with any honey that might have melted off and then sprinkle with some seal salt for yet some more amazing flavor. Then just let them cool and start munching! If you have more self control than I do, wrap some of them up in a cellophane bag, add a bow and someone is going to love you for ever once they tastes these candied walnuts.     Rosemary & Thyme Candied Walnuts   Print Prep time 5 mins Cook time 10 mins Total time 15 mins   Author: Leigh Anne Wilkes Serves: 2 cups Ingredients 5 tsp olive oil 5 tsp honey ¼ tsp cayenne pepper or chipotle chili powder 1 Tbsp fresh rosemary, finely chopped 3 tsp fresh thyme, finely chopped 2 cups walnut pieces ¼ tsp sea salt Instructions Preheat oven to 350 degrees F. Mix together olive oil, honey, cayenne, rosemary and 2 tsp thyme. Add walnuts and stir to coat. Spread in a single layer on a parchment lined baking sheet. Bake for 10-12 minutes. Cranberry Pecan Cake This Cranberry Pecan Cake comes together easily for a quick holiday or seasonal dessert! It makes a great neighbor gift, too! I am so excited to have Jamie from Love Bakes Good Cakes here for our Bake Craft Sew series.  Jamie has some serious goodness on her blog.  Her recipes are amazing and her photos beautiful.  Please pay her a visit and check out all the yummy recipes! Hey, y’all! I’m Jamie from Love Bakes Good Cakes and I’m excited to be joining Leigh Anne for this year’s Bake Craft Sew 2016! I love to share delicious and simple family-friendly dishes, with everything from healthier dishes to over-the-top desserts! As a homeschooling mom with four kiddos still at home, I know how important dinner time is and how hectic it can be juggling life while getting everyone fed! I joined Leigh Anne last year with these Chocolate Chip Hazelnut Shortbread Cookies recipe. I debating on whether to share another cookie idea this year, but my kiddos convinced me that they wanted to make this Cranberry Pecan Cake instead. Back when we lived in the Midwest, we had a lovely elderly neighbor named Ms. Corky. Let me tell you, she was quite the character! Not only did she attend the same church as us, but in many ways, she became a surrogate grandma to the kids and me. It seemed like she was always baking up something good to eat and I am thankful that she shared many of her recipes with me – including this Cranberry Pecan Cake! Other than being ridiculously quick to whip together and delicious, I also love that this cake lends to being easy to customize! Sometimes, I like to add some orange zest to the batter to really make the flavor pop. I’ve even swapped out the dried cranberries for dried blueberries with equally tasty results!   One of my family’s favorite things about this time of the year is that it’s finally cool enough to bake in Phoenix … and we love to bake lots of yummy treats! Although we enjoy it for dessert during the holiday season, we also like to give these Cranberry Pecan Cakes to our friends and neighbors for gifts! Wrapped in a pretty bow, it’s a simple gift idea! I hope you enjoy this as much as we do! < Cranberry Pecan Cake   Print Prep time 10 mins Cook time 50 mins Total time 1 hour   Author: Jamie Sherman Serves: 9 servings Ingredients ⅔ cup butter, softened 1 cup sugar 3 eggs 1-1/2 tsp. vanilla extract 2 cups all-purpose flour 1 tsp. baking powder ¾ tsp. baking soda ½ tsp. salt 1 cup (8 oz.) sour cream ¾ cup dried cranberries, chopped ⅓ cup chopped pecans Powdered sugar, for dusting Instructions Preheat oven to 350°F. Grease and flour an 8-inch square baking pan and set aside. In a large mixing bowl, cream the butter and sugar. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Combine flour, baking powder, baking soda, and salt; add to the creamed mixture alternately with the sour cream. Fold in the cranberries and pecans. Pour into prepared pan. Bake for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before turning out onto a wire rack to cool completely. Cranberry Lemon Gooey Bars Cranberry and lemon are a perfect holiday combo in these Cranberry Lemon Gooey Bars. I’m excited to have my friend Jenny from The Melrose Family back again this year for Bake Craft Sew.  Last year she shared that fun Grinch Munch with us!  Jenny and I are in a Mastermind group together and I always learn so much from her.  Welcome Jenny!  Be sure to check out all the other great ideas that are part of Bake Craft Sew over at Mique and Cindy’s blogs. With the holidays just around the corner my family and I over at The Melrose Family are gearing up for some holiday baking.  There are some flavors that just seems to scream the holidays like peppermint.  I’m not a huge fan though so instead I have a tendency to bake with lemon, orange, cranberries and pomegranates.  This holiday will not be an exception.  Especially after tasting how perfect these Cranberry Lemon Gooey Bars came out.  I outdid myself on these! Cranberry Lemon Gooey Bars I first realized my love for gooey bars last spring when I made my Strawberry Pink Velvet Gooey Bars.  Gooey bars are by far my favorite type of bar.  The soft flaky crust with the gooey cream cheese layer in the middle combined with your favorite fruit is a match made in heaven.  I was inspired by my Orange Cornbread Cake because I realized with that recipe how amazing cranberries are with a citrus cake.  Plus, the sugared cranberries in that recipe are always such a huge hit because they’re so pretty. Something I learned the hard way the first time I made my gooey bars is that you absolutely have to wait until the bars have cooled before breaking into them.  Otherwise, you’ll end up with a mess in your hands and they will not look anything like bars.  They’ll just be bundles of cake bites.  They’ll taste the same, but if you’re looking for bars make sure to let them cool before slicing them. No matter what the reason or event is for making these gooey bars, you’ll be sure to impress your guests with the flavor.  They are a great alternative or addition to your holiday pie spread.  My husband isn’t a pie person so we always seem to have alternatives like our Raspberry Cheesecake Cupcakes or our Caramel Apple Bread Pudding.  We certainly love options!     Cranberry Lemon Gooey Bars   Print Prep time 15 mins Cook time 45 mins Total time 1 hour   Author: Leigh Anne Wilkes Serves: 18 bars Ingredients Lemon Supreme Cake Mix 3 eggs ½ cup of butter melted 8 oz cream cheese 1 cup of powdered sugar 1 cups cranberries halved Instructions Preheat the oven at 350 F and line a 9 x 13 baking dish with tin foil. Spray the tin foil with cooking spray. Combine the lemon supreme cake mix, 1 egg and melted stick of butter for the crust. Push ⅔ of the crust onto the tin foil to create the crust layer. In a separate bowl combine the cream cheese, 2 eggs and powdered sugar. Place the cream cheese layer over the crust. Cover the cream cheese layer with the cranberries that are cut in half. Drop pieces of the leftover crust on top of the cranberry gooey layer. Bake for 45 minutes. I would say hands down my favorite thing to take to any type of get together is a good tasty appetizer that everyone can enjoy immediately! Earlier this year I was introduced to this Pomegranate Guacamole recipe from a friend and I became obsessed! I’ve taken it to a few Fall BBQ’s the last couple months and it’s been such a hit! Everyone has loved it and I’ve even been asked for the recipe for a handful of times! This recipe should only take you less than 10 minutes to throw together! Well, that is if you are like me and buy the pomegranate seeds in the little pre-packaged containers at your local grocery store! If you are ambitious and know that wooden spoon trick to get the pomegranate seeds out, then high five to you. But, honestly, I’m just too lazy for that! Plus, I hate nothing more than scrubbing stains out of shirts and without fail when I try to open a pomegranate the juice shoots on me. To make the guacamole, start by gathering all the tasty and colorful ingredients! You’ll need: 3-4 Ripe Avocados (depending on size) 1/2 cup Red Onion, chopped 1/3 cup Cilantro, chopped 4 tablespoons Lime Juice 4 tablespoons Lime Juice 1 teaspoon Salt 1/2 teaspoon Pepper 1/2 cup Pomegranate Seeds Cut the avocados in half, remove the pit and then slice into small chunks.   • 4 tablespoons Lime Juice
  • 4 tablespoons Lime Juice
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • ½ cup Pomegranate Seeds
Instructions
  1. Cut the avocados in half, remove the pit and then slice into small chunks. Spoon the chunks into a medium bowl.
  2. Add the red onion, cilantro, lime juice, salt and pepper. Mash together using a fork until you reach the consistent you like. I tend to like mine on the chunkier side!
  3. Gently stir in the pomegranate seeds and serve with chips

Apple Sheet Cake with Maple Glaze This Apple Sheet Cake with Maple Glaze tastes just like fall. The combination of apples, cinnamon and maple syrup screams fall! Whenever I have to feed a crowd I love a good sheet cake and this apple sheet cake with maple glaze is a good one and tastes just like fall! I love apple season here in the Pacific NW.  We get lots of different varieties of apples and I love visiting the Farmer’s Market in the early fall when they let you taste the different varieties.  One of my favorites is Honey Crisp but I’m a big fan of the Granny Smith apple, especially when it comes to baking.  You get good flavor and texture with a granny smith and they are the perfect addition to this apple sheet cake.  Thanks to the apples, this cake is moist and has just the right amount of sweet. I’m a frosting girl, so for me, the best part of this cake and any cake, is the frosting.  This one is topped with a delicious maple syrup glaze.  The glaze adds an additional touch of sweetness to the cake and the addition of maple syrup makes it feel and taste even more like fall. For more apple treats check out these:  My favorite apple cake – Apple Pudding Cake | Apple Pie Ice Cream | French Crumb Apple Pie Apple Sheet Cake with Maple Glaze   Print Prep time 30 mins Cook time 20 mins Total time 50 mins   Author: Leigh Anne Wilkes Serves: 24 pieces Ingredients 2 cups flour 2 cups sugar 1 tsp cinnamon ½ cup butter 1 cup water ½ cup shortening ½ cup milk ½ tsp baking soda 2 eggs 1 tsp vanilla 2 cups granny smith apples, peeled and chopped Glaze 2 Tbsp butter, melted 1 Tbsp milk 2 Tbsp maple syrup 1½ cup powdered sugar 1 tsp vanilla Instructions In a sauce pan combine butter, water and shortening. Bring to a boil. Stir in flour and stir to combine. Add milk, then baking soda, eggs and vanilla. Stir in apples. Pour into a greased 15 x 13 jelly roll pan. Bake at 400 degrees for 20 minutes. Cool for 10-15 minutes Glaze: Combined melted butter, milk, powdered sugar, maple syrup and vanilla. Add additional milk if needed to make the glaze spreadable. Stir until smooth. No Bake Pumpkin Pie Pumpkin season is here and it’s time to celebrate.  This No Bake Pumpkin Pie is the perfect guest to invite to your pumpkin party! It’s that time of year!  Pumpkin Pie time.  With Thanksgiving quickly approaching, pumpkin pie is ready to take center stage when it comes to pie choices for most people. Do you reserve pumpkin pie just for Thanksgiving and Christmas or do you enjoy it whenever you want?  Maybe you love a good slice of pumpkin pie but pie is too much work and and takes too much time.  Well,  I’m about to rock your world.  This  pie is no bake and comes together in under 30 minutes. Now I have to confess,  I did bake the graham cracker crust because it was easier for me to make one at home than run to the store and buy one.   If you really want to make it totally no bake just buy yourself a premade graham cracker crust and you’ll be good to go – no bake!  This pie is so easy to make you may just find yourself making it alot more often than just Thanksgiving and Christmas. I shared this pie with my neighbors and a few minutes after my husband delivered it I got a text with a picture of them eating it, telling me how wonderful it was and they couldn’t believe it was no bake! There is a little cooking involved with this recipe, on the stove top but no baking.  The pie filling uses unflavored gelatin to help thicken it.  The addition of some pumpkin pie spice, orange juice and vanilla give it a great flavor. I bet you can’t  eat just one piece!  But if you do happen to end up with some leftover pie give this recipe for a Pumpkin Pie Milkshake a try.  It is so delicious and may be my favorite way to eat pumpkin pie.  For some double pumpkin flavor top your pie with pumpkin pie ice cream.  It’s amazing!!  And then there is pumpkin pie cake too….. Here’s to pumpkin season! No Bake Pumpkin Pie   Print Prep time 10 mins Cook time 10 mins Total time 20 mins   Author: Leigh Anne Wilkes Recipe type: Dessert Serves: 8 servings Ingredients 1 9 inch prepared or homemade graham cracker crust 1 (.25 oz) package of plain, unflavored gelatin 1 Tbsp pumpkin pie spice 3 Tbsp fresh orange juice 2 tsp vanilla ½ tsp salt 1 (14 oz.) can sweetened condensed milk 2 eggs, beaten 1 (15 oz.) can pumpkin puree Homemade Graham Cracker Crust 9 whole graham crackers, approx. 1¼ cups of crumbs 3 Tbsp sugar ⅓ C butter, melted Instructions In a heavy pan combine gelatin, spice and salt. Stir in condensed milk and eggs, mix well. Let stand for one minute and then place over low heat, stirring constantly until it thickens (5-7 mins) Remove from heat and stir in vanilla. Stir in pumpkin. Mix well. Pour into crust. Chill 4 hours before serving Homemade Graham Cracker Crust Combine crumbs and sugar Add in melted butter and stir to combine. Press mixture into a 9 inch pie pan and press firmly to sides and bottom Bake at 350 for 8 minutes. Fudgy Chocolate Walnut Pie Fudgy Chocolate Walnut Pie is the perfect combo of a brownie and a pie all in one! This post is sponsored by the California Walnut Board but all opinions are my own. Are there certain foods that when you cook with them or eat them they remind of you a certain person?  I am that way with walnuts.  They always remind me of my Grandpa Schenck.  We lived in Wisconsin growing up and every summer we would take the train out to California to spend a month or so with my mother’s parents.  I remember sitting on the back porch of grandpa’s house in San Gabriel shelling walnuts.  I can never cook with or eat a walnut without thinking about my grandpa. This fudgy chocolate walnut pie is full memories for me and lots of chocoalte and walnut goodness.  The chocolate is fudgy and gooey but it’s not runny.  A layer of toasted walnuts on the bottom of the pie adds some nice crunch and flavor to the pie and helps the chocolate not to be too overwhelming. I used a store bought pie crust but you can always make your own.  I love my Perfect Pie Crust recipe. Let the pie cool for an hour or so so that it is easier to cut and serve.  Of course, a nice scoop of vanilla ice cream would be perfect on this pie! Fudgy Chocolate Walnut Pie   Print Prep time 45 mins Cook time 35 mins Total time 1 hour 20 mins   Author: Leigh Anne Wilkes Recipe type: Dessert Serves: 8 servings Ingredients 1 9 inch pie crust 1 cup semi sweet chocolate chips 4 Tbsp butter ¼ cup canola oil 2 Tbsp unsweetened cocoa powder ¾ cup packed brown sugar 2 eggs 1 Tbsp vanilla extract ¾ tsp salt ¼ cup all purpose flour 1 cup walnuts toasted and chopped Instructions Preheat oven to 350 degrees F. Line pie pan with pie dough and press into bottom of pan and up the sides. Trim overhang to ½ inch and tuck overhang under itself. Crimp down evenly around the dish using your fingers. Chill for 15 minutes wrapped in plastic wrap. Prick bottom of crust and bake for 18 minutes or until lightly golden around the edges. Reduce heat to 325 degrees F. Combine ⅔ cup chocoalte chips and butter in a bowl and melt in microwavve. Stir in oil and cocoa, stir until smooth. In another bowl, mix together sugar, eggs, vanilla and salt until smooth. Whisk chocolate mixture into sugar mixture. Stir in flour and remaining chocolate chips until combined. Spread walnuts in bottom of pie crust. Pour batter over the top and smooth to level. Bake until a toothpick comes out with just a thin coating of batter on it, about 30-35 mimutes. Let pie cool for about 1½ hours. Slice and serve. Pumpkin Spice Cinnamon Roll Cake Pumpkin Spice season is here and I couldn’t be more excited and this Pumpkin Spice Cinnamon Roll Cake is the perfect way to kick it off. I’m a big pumpkin spice fan.  One of my favorite fall treats is a pumpkin spice steamer from Starbucks. I’ve been on a bit of a pumpkin binge lately and have already made my first pumpkin pie. I’ve been adding pumpkin spice to anything I can!  Today’s recipe is an old favorite of mine and one I originally shared here on the blog back in 2011.  The recipe for Cinnamon Roll Cake has been a family favorite ever since. I had an open can of pumpkin puree and some pumpkin pie spice just begging to be used last week so I decided they would be the perfect addition to this yummy cinnamon roll cake. I added in some pumpkin pie spice into the batter and then pumpkin puree into the filling. And then swirled the two together. The cake is then drizzled with some powdered sugar and more pumpkin spice goodness. This pumpkin pie spice cinnamon roll cake is ooey, gooey and delicious just like a cinnamon roll but in cake form.  Pretty perfect! The pumpkin flavor is not overpowering  but it blends beautifully with all the cinnamon goodness.  Cinnamon and pumpkin are soul mates. For more pumpkin goodness check out:  Pumpkin Pie Ice Cream – Pumpkin Cheesecake Bars – Pumpkin Pie Cake Pumpkin Spice Cinnamon Roll Cake   Print Prep time 15 mins Cook time 30 mins Total time 45 mins   Author: Leigh Anne Wilkes Recipe type: Dessert Serves: 12 pieces Ingredients Cake: 3 c. flour ¼ tsp.salt 1 c. sugar 4 tsp. baking powder 2 tsp pumpkin pie spice 1½ c. milk 2 eggs 2 tsp. vanilla ½ c. butter, melted Topping ½ c. butter, softened 1 c. brown sugar 2 Tbsp. flour 1 Tbsp. cinnamon ⅓ cup pumpkin puree Glaze 1 c. powdered sugar 2-3 Tbsp. milk 1 tsp. vanilla ½ tsp pumpkin pie spice Instructions Cake Mix everything together except for the butter. Slowly stir in the melted butter and pour into a greased 9×13 pan. Topping Mix all the ingredients together until well combined. Drop evenly over the batter and swirl with a knife. Caprese Garlic Bread Caprese Garlic Bread is the perfect combination of two favorite dishes. It makes for the perfect summer treat. The other day my husband came in from the garden and instructed me that I needed to start making more recipes with tomatoes.  Our garden has been exploding with tomatoes and we are running out of friends to share them with. Fortunately for me, and my husband, my friend Jamielyn’s new cookbook, The I Heart Naptime Cookbook arrived in the mail.  I couldn’t wait to try a lot of the recipes but decided given my current tomato situation that the Caprese Garlic Bread was at the top of my list. The cookbook is full of amazing recipes that all take under an hour to prepare. Caprese Salad is a favorite summer salad and I am never one to pass up a slice of garlic bread so this Caprese Garlic Bread was pretty much a match made in heaven. The bread is spread with layer of garlic parmesan butter and then topped with slices of fresh mozzarella and fresh tomatoes. Bake the bread for about 15 minutes and then sprinkle with some fresh basil and a drizzle of a yummy balsamic glaze.  Oh my!  This stuff is delicious!! I can’t wait to work my way through more of Jamielyn’s recipes but in the meantime, I’m going to keep making these Caprese Garlic Bread with all those tomatoes in my garden!! Caprese Garlic Bread   Print Prep time 10 mins Cook time 13 mins Total time 23 mins   Author: Leigh Anne Wilkes Recipe type: Side Dish Serves: 6-8 Ingredients 1 loaf French bread or baguette ½ cup salted butter, room temperature ¼ cup grated Parmesan cheese 2 garlic cloves, minched (1 tsp) 1 tsp garlic powder 1 tsp dried parsley flakes or 1 Tbsp chopped fresh parsley salt and pepper 10 oz. fresh mozzarella cheese, cut into ¼ inch thick slices 3-4 medium tomatoes, sliced ⅔ cup balsamic vinegar 3 tsp honey ¼ cup chopped fresh basil Instructions Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil or parchment paper. Cut the bread in half horizontally and place on baking sheet, cut side up. In a medium bowl, sitr together the butter, Parmesan, garlic, garlic powder, parsley and a pinch each of salt and pepper. Spread the mixture on top of the bread. Arrange slices of mozzarella on top of the bread and then top with tomato slices. Season the tomatoes with salt and pepper. Bake for 13-15 minutes or until the mozzarella has melted Meanwile, in a small saucepan, bring the vinegar to a simmer over medium heat. Stirt in the honey. Simmer for 3-4 minutes or until the vinegar has reduced by about half and has the consistency of a thin syrup. Remove from the heat and place in a small bowl. It will thicken as it sits. Remove the bread from the oven and let cool for a few minutes. Sprinkle with the fresh basil and drizzle with the balsamic reduction.
